8 ounces uncooked penne
10.6 ounces hot Italian sausages (crumbled (see note))
3 cloves garlic (minced)
1/2 cup chicken broth or white wine
1/2 tablespoon flour
1 (14 fluid ounce) can diced tomatoes (with juices)
1/2 cup heavy/whipping cream
Salt & pepper (to taste)
6 large leaves basil (sliced/torn into small pieces)
Freshly grated parmesan cheese (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
  • Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
  • Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
  • Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
  • Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

1.5 cups diced onion
2 cloves garlic, minced
2 cups low-sodium chicken broth
1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild
1/2 cup heavy cream
8 oz penne pasta
1/2 teaspoon salt and pepper, each
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions

Steps:

  • Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
  • Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
  • Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted, spotty brown, and bubbly.

3/4 pound sweet Italian sausages, casings removed
2 tablespoons olive oil
1 cup chopped onion
4 large garlic cloves, chopped
3 cups broccoli florets
1 medium zucchini, cut into 3/4-inch pieces
1/4 cup dry white wine
5 large plum tomatoes, seeded, diced
1 pound rotini or fusilli pasta, freshly cooked
1 cup grated Parmesan cheese
1/2 cup drained chopped black olives
1/2 cup (about) purchased Parmesan cheese salad dressing

Steps:

  • Sauté sausage in heavy large skillet over medium heat until cooked through, breaking up with spoon, about 6 minutes. Using slotted spoon, transfer sausage to paper towels. Pour off drippings; add oil to same skillet. Add onion and garlic; sauté until translucent, about 5 minutes. Add broccoli, zucchini and wine; sauté until vegetables are just tender, about 4 minutes. Prep time does not include the time taken to *cook the Pasta which usually takes about 10 minutes in the microwave. I add plenty of salt and a good dollop of Olive Oil to the water. (I find the Olive Oil flavours the Pasta) 'BEER STICKS' are about the size of Frankfurters, but the meat is like that of pepperoni OR salami. They are called Beer Sticks in N.Z. but there may well be another name used for them elsewhere.
