Steps:
- Preheat oven to 350F. Saute veg in olive oil with ½ tsp salt over medium heat until caramelized. Set aside.

- 1. Mix the white bread and buttermilk together and set aside. Melt the butter in a large skillet. Add the onion, garlic, green pepper, and mushrooms. Season with salt and pepper. Cook until softened and mushrooms have gave up their moisture. Let cool
- 2. Mix the buttermilk bread mixture together with your hands making sure all the bread is broken up and moist. Place the ground beef in a large bowl. Add the buttermilk bread mixture, ketchup, Worcestershire, eggs, Panko and onion green pepper mixture. Mix well with hands until all ingredients are well incorporated.
- 3. Spray a 9X15 pan with cooking spray. Preheat oven 375 degrees. Place half of the meatloaf mixture in bottom of pan. Layer half the Provolone cheese on top. Top with remaining meat mixture. Bake for 40 minutes. Add the remaining Provolone cheese and bake until cheese is melted and bubbly.
- 4. Let rest for 10 minutes before cutting.
