2 tablespoons butter, melted
1 tablespoon oil from oil-packed sun-dried tomatoes
4 sheets phyllo dough
1 tablespoon chopped oil-packed sun-dried tomatoes
1 round (8 ounces) Brie cheese, rind removed
Assorted crackers

Steps:

  • In a small bowl, combine butter and oil. Lightly brush one sheet of phyllo dough with some of the butter mixture; place another sheet of phyllo on top and brush with butter mixture. Repeat twice., Cut layered phyllo into a 9-in. square; discard trimmings. Spread chopped tomatoes in the center of the square. Place Brie over tomatoes. , Brush corners of phyllo with 1 teaspoon butter mixture. Fold pastry over the cheese and pinch edges to seal. Place seam side down on a greased baking sheet. 1 (15 ounce) brie round
1 (7 ounce) jar sun-dried tomatoes packed in oil, undrained
2 tablespoons fresh parsley, minced
2 tablespoons parmesan cheese, freshly grated
6 cloves garlic, pressed

  • Remove rind from top of Brie, cutting to within 1/2 inch of outside edges.
  • Place on serving plate.
  • Remove 4 tomatoes and 1 Tbsp.

3 sheets frozen phyllo dough, thawed for 15 minutes if frozen
3 to 4 tablespoons melted butter
1/2 cup sliced natural almonds, roasted, divided
2 tablespoons Dijon-style mustard
1-pound wheel good-quality brie cheese
2 tablespoons dried fines herbs (chervil, chives, tarragon and parsley)

Steps:

  • Preheat oven to 375 degrees F.
  • Spread 1 sheet phyllo on work surface; brush evenly with melted butter. Place a second sheet of phyllo on top; brush with melted butter. Place third sheet of phyllo crosswise over first 2 sheets; brush with melted butter.
  • Sprinkle 1 tablespoon almonds in small circle in center of phyllo. Spread mustard over both sides of Brie. Sprinkle both sides with herbs. Place brie on top of almonds. 2/3 cup cider vinegar
2/3 cup (packed) golden brown sugar
3 ounces dried tart cherries (3/4 cup)
1 1/2 tablespoons chopped fresh rosemary
3 large garlic cloves, finely chopped
2 teaspoons grated lemon peel
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 cup blanched slivered almonds, toasted
Cheese and Phyllo
1 cup (2 sticks) unsalted butter, melted
1 pound fresh phyllo pastry sheets or frozen, thawed
4 1/2 tablespoons chopped fresh rosemary
1 32- to 36-ounce wheel of Brie
Presentation
Fresh herb sprigs (such as rosemary, sage,a and chives)
Additional dried apricots and dried cherries
Fresh baguettes, thinly sliced

Steps:

  • To Make Chutney:
  • Combine all ingredients except almonds in heavy large saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Reduce heat to medium-low; simmer until most liquid has evaporated and chutney is thick, stirring occasionally, about 25 minutes. Mix in almonds. Transfer chutney to bowl.
  • Chill until cold, about 3 hours. (Can be made 1 week ahead. Cover, keep chilled.)
  • Assembly of cheese and phyllo:
  • Brush heavy large baking sheet with butter; set aside. Unroll pastry. Cover with plastic wrap and damp kitchen towel. Transfer 2 stacked phyllo sheets to work surface, arranging 1 short side parallel to edge of work surface. Arrange 2 more stacked phyllo sheets on work surface, overlapping long side of first sheets by about 5 to 7 inches and forming rectangle about 18 by 17 inches. Continue to lift phyllo in sections and to fold snugly over top of cheese, brushing with butter and pressing each section to adhere until cheese is wrapped (the top center 2 to 3 inches of cheese will not be covered). Use hand and metal spatula to transfer wrapped cheese to prepared baking sheet.
  • Place 1 phyllo sheet on work surface. Brush with butter. Starting at 1 long side, fold 1 inch of pastry over. 6 sheets phyllo dough, 12 x 18 inch (the key to this recipe and any other phyllo dough recipe is to keep the thawed phyllo sheets covered)
1/4 cup pine nuts
1/4 cup sun-dried tomato packed in oil, drained and chopped,reserve one tbs oil
2 tablespoons melted butter
1/4 cup chopped fresh basil leaf
2 cloves garlic, minced
8 ounces firm brie cheese, round with rind in tact

  • roast the nuts on a baking sheet in a 350 oven for 5-7 minutes.
  • mix the oil and the butter.
