Time 1h45m

Yield 10 serving(s)

Number Of Ingredients 11

1 3/4 lbs carrots, with tops (weight of carrots minus the greens)
6 tablespoons butter, softened
3/4 cup sugar
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon vanilla extract
1/2 teaspoon salt
3 eggs
1/2 cup grated carrot
1/2 cup chopped pecans
3/4 cup light brown sugar

Steps:

  • Remove tops from carrots and set aside in refrigerator until ready to serve. Peel carrots and cut into chunks. In 3-quart saucepan, place carrots and enough water to cover. Heat to boiling; reduce heat to medium. Cover; cook about 20 minutes or until soft. Drain; cool slightly.

Use thin strips of wood to square-up the sides of the carrot and hold in place with crumbled up pieces of foil.
  • [Alternatively, bake soufflé in a greased 2-quart casserole.].
  • Pecan Topping:.
  • In medium bowl, mix grated carrots, pecans, and brown sugar. Sprinkle evenly over carrot mixture.
  • Bake uncovered 55 to 65 minutes or until center is set and a knife inserted comes out clean.

PICCADILLY'S CARROT SOUFFLE

Piccadilly's Carrot Souffle image

A sweet dish from Piccadilly Cafeteria...this is the only way my sisters or I could ever be made to eat carrots! This recipe is slightly different than the others posted here. We usually double it and bake it in a 13x9-inch dish.

Provided by coconutcream

Categories     Vegetable

Time 1h10m

Yield 6 serving(s)

Number Of Ingredients 8

1 1/2 lbs carrots, cooked
6 -8 tablespoons butter
3 eggs
1/4 cup flour
1 1/2 teaspoons baking powder
3/4-1 cup sugar
2 tablespoons brown sugar
1/4 teaspoon cinnamon

Steps:

  • Put in food processor until smooth.
  • Pour into greased baking dish.
  • Bake at 350 degrees for one hour.

Tips:

  • For the perfect soufflé, use fresh, high-quality ingredients.
  • Make sure your oven is preheated to the correct temperature before baking the soufflé.
  • Beat the egg whites until they are stiff but not dry. Over-beating will make the soufflé tough.
  • Gently fold the egg whites into the soufflé mixture. Over-mixing will deflate the soufflé.
  • Bake the soufflé immediately after assembling it. The longer it sits, the more likely it is to deflate.
  • Serve the soufflé immediately after baking. It will start to deflate as it cools.

Conclusion:

A sweet carrot soufflé is a delicious and impressive dessert that can be enjoyed by people of all ages. With its light and fluffy texture and sweet carrot flavor, this soufflé is sure to be a hit at your next dinner party or special occasion. So next time you're looking for a special dessert, give this sweet carrot soufflé a try.
