4 medium dill pickles

Steps:

2 tablespoons 1/3-less-fat cream cheese (Neufchâtel), softened
1 Old El Paso™ flour tortillas for burritos (8 inch; from 11-oz package)
1/4 cup shredded carrots
2 tablespoons shredded Cheddar cheese
4 petite whole kosher dill pickles

Steps:

  • Spread cream cheese evenly over tortilla. Sprinkle carrots and Cheddar cheese evenly over cream cheese.
  • Place pickles, end to end, about 1 inch from one edge of tortilla. Starting at edge with pickles, roll up tortilla.
  • Wrap tortilla in plastic wrap. Refrigerate 30 minutes. (Roll-ups can be made ahead and stored in refrigerator up to 2 days.)
  • To serve, cut 1/2 inch off each end of tortilla; cut into 6 bite-size pieces.

8 medium pickle, dill
1 pkg esskay chipped beef
16 oz cream cheese, whipped

Steps:

  • 1. Lay out all the pickles on paper towels. This helps get the moisture off.
  • 2. Take one piece of dried beef and coat with cream cheese. Remember to get the whipped type, this makes it much easier to spread. Then place another piece of dried beef just so the bottom of the coated piece is covered by the top of the uncoated piece of dried beef. Then coat the second piece of dried beef with cream cheese as well.
  • 3. Place the pickle at one end and wrap away. Repeat for all pickles.
  • 4. Let them set in a container in the refrigerator overnight.
  • 5. Slice into bit size pieces.

I have been making these since the early 1970's and they are the first appetizer to disappear when I serve them at a party. When we can afford it, pastrami is our favorite deli meat to use in this recipe.

1 lb deli pastrami, corned beef, italian beef, or smoked ham (thinly sliced but not shaved)
8 -12 oz cream cheese, softened (do not substitute light or no-fat)
kosher or polish dill pickle wedges

Steps:

  • 1. Pat slices of deli meat dry with paper toweling and lay them out individually on a counter top. Spread a thin layer of softened cream cheese on each meat slice. Dry the Kosher dill pickles thoroughly with paper toweling and lay one wedge at the bottom of each meat slice. Roll tightly and refrigerate until cream cheese has set up again. Slice the rolls into 1/4-1/2 inch pinwheels and serve with crackers.

8 large dill pickles
2 pkg deli meat ( ham, or roast beef ) 4oz each

  • 1. Dry pickles off. You can use small dill pickles instead. The portions will just be smaller.

  • 3. Wrap the meat around the pickle. If the pickles are really large then use 2 slices of meat.
