1/4 cup sliced red onion
2 tablespoons red wine vinegar
2 medium English cucumbers, peeled and cut into rounds 1/4 to 1/2 inch thick
2 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1 large pickle, diced, plus 1 tablespoon pickle juice
1 teaspoon garlic powder
1 teaspoon dried dill or dill seed (see Cook's Note)
Kosher salt and freshly ground black pepper

3 cucumbers, the small Lebanese variety
3 tablespoons fish sauce
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
1 teaspoon turmeric powder

1 red chili, sliced fine (seeded or not-it's up to you)
1/2 cup mint, Vietnamese would be good
1/2 cup fresh coriander leaves
