PIEROGIE CASSEROLE
I substitute egg noodles for lasagna noodles to make this dish quick to make. I'm always asked to make it for picnics/parties. It goes a long way to feed a crowd since it is so rich. You can make it with or without the sauerkraut, or half and half like I do.

Tips:
- Use a variety of cheeses. This will give your casserole a more complex flavor. Some good options include cheddar, mozzarella, Parmesan, and Gruyère.
- Don't overcook the pierogies. They should be cooked through but still slightly firm. Otherwise, they will become mushy in the casserole.
- Add some vegetables to your casserole. This will make it more nutritious and colorful. Some good options include onions, peppers, mushrooms, and spinach.
- Season your casserole well. Salt, pepper, and garlic powder are all good choices. You can also add other spices to taste, such as paprika, cumin, or chili powder.
- Top your casserole with a crispy topping. This could be anything from breadcrumbs to crushed potato chips. This will add a nice texture and flavor to the casserole.
Conclusion:
Pierogie casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover pierogies. With a few simple ingredients, you can create a casserole that is sure to please everyone at the table. So next time you are looking for a quick and easy meal, give pierogie casserole a try.
