Tips:

  • Use fresh pineapple: Fresh pineapple gives the coffee cake the best flavor. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Toast the pecans: Toasting the pecans brings out their flavor and makes them more crunchy. You can toast them in a skillet over medium heat for 5-7 minutes, or in a preheated oven at 350 degrees Fahrenheit for 10-12 minutes.
  • Don't overmix the batter: Overmixing the batter will make the coffee cake tough. Mix it just until the ingredients are combined.
  • Bake the coffee cake until a toothpick inserted into the center comes out clean: This will ensure that the coffee cake is cooked through.

Conclusion:

Pineapple coffee cake with toasted pecans is a delicious and easy-to-make coffee cake that is perfect for any occasion. It is moist and flavorful, with a sweet and tangy pineapple filling and crunchy pecan topping. This coffee cake is sure to be a hit with everyone who tries it.
