Tips:

  • For the best results, use fresh pineapple. If using canned pineapple, be sure to drain it well and pat it dry before using.
  • To make the cookies extra chewy, use brown sugar instead of granulated sugar.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be sure to chill the dough for at least 30 minutes before baking. This will help the cookies to hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before frosting them. This will help the frosting to set properly.

Pineapple cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their sweet and tangy flavor, these cookies are sure to be a hit with everyone who tries them.
