CREAM CHEESE PINEAPPLE PUDDING/FROSTING

Cream Cheese Pineapple Pudding/Frosting image

I have been making this since my son, Jeremy was small, twenty-five years now. He did bring the cake out of the refrigerator one time, the cake being "top heavy" landed upside down on the floor. Now he knows when mom say's she is making "pineapple upside down cake", he knows what I'm making! I also made it for my Dad's 4th of July birthday party, everyone loved it! You can also make it as a pudding, and put in individual serving dishes, for about 8 -10 people. It's that good!

CREAM CHEESE COOL WHIP FROSTING RECIPE - (3.8/5)

Cream Cheese Cool Whip Frosting Recipe - (3.8/5) image

Provided by MaryEllen

Number Of Ingredients 5

1 (8-ounce) package cream cheese, softened
1 (16-ounce) container whipped topping (thawed, if frozen)
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1 (3.5-ounce) package instant vanilla pudding mix (or other desired flavor), optional

Steps:

  • In a large mixing bowl, stir together softened cream cheese with the Cool Whip. Add the sugar, vanilla, and pudding mix, if using. Stir until all ingredients are thoroughly combined. If you would like a colored frosting, add several drops of food coloring and mix. Continue to add food coloring, stirring after each addition, until the frosting is the desired color. With a spatula, spread the frosting over your desired dessert, several tablespoons at a time. Once the entire surface is covered, use the spatula to smooth out the frosting and make sure it's evenly distributed over the surface. For an even more attractive cake, use a butter knife or spatula to create a wave-like design in the frosting. You can also spoon the frosting into a pastry bag (or a plastic storage bag with a small hole cut from one of the corners), and, with a frosting tip, squeeze frosting onto your dessert.

Tips for Perfect Pineapple Cool Whip Frosting:

  • Use fresh pineapple for the best flavor. If using canned pineapple, drain it well and pat it dry.
  • Make sure the Cool Whip is thawed before using. If it's frozen, it will be difficult to mix and will not be as smooth.
  • For a creamier frosting, chill the bowl and beaters before whipping the Cool Whip.
  • Add the pineapple gradually, and beat until the frosting is well combined.
  • If the frosting is too thin, add more powdered sugar. If it's too thick, add more milk or cream.
  • Use the frosting immediately or store it in the refrigerator for up to 24 hours.

Conclusion:

Pineapple Cool Whip Frosting is a delicious and easy-to-make frosting that is perfect for cakes, cupcakes, and other desserts. It's light and fluffy, with a sweet and tangy flavor that is sure to please everyone. With just a few simple ingredients, you can create a frosting that will make your desserts look and taste amazing.
