½ cup Pineapple (chopped into small pieces)
1 ½ teaspoons Sugar
¾ cups Plain yogurt
1 small Green chili (finely chopped)
Salt to taste
⅛ teaspoon Black salt (kala namak)
½ teaspoon Roasted cumin powder
⅛ teaspoon Black pepper powder
¼ cup Walnuts (toasted and chopped finely, optional)

Steps:

  • Take chopped pineapple and sugar in a pan.
  • Cook it on medium heat. Sugar will start to melt and bubble up.
  • Cook till pineapples get soft but not mushy (about 4-5 minutes). And it will absorb all the sugar syrup.
  • Let it cool completely.
  • Take yogurt in a bowl and whisk with wire whisk or spoon till smooth
  • Add cooled pineapples and chopped green chilies. Mix it well.
  • Add walnuts, black salt, roasted cumin powder, black pepper powder and salt. Mix it well.
  • Chill in the fridge for at least 2 hours before serving.

2 cups pineapple chunks
2 tablespoons sugar
2 cups thick yogurt
1/4 teaspoon chili powder
1/4 teaspoon ground black pepper
1/4 teaspoon roasted cumin powder
1/2 teaspoon black salt
1 tablespoon dried (crushed mint leaves (or use fresh ones))
1/4 cup chopped cilantro (optional)
1/4 cup pomegranate arils (optional)

Steps:

  • Place a pan over medium heat and add pineapple chunks and sugar.
  • Cook for about 2-3 minutes and turn the pineapple chunks once. Shake the pan to allow the caramelized sugar to coat the pineapple nicely. Cook for another 2-3 minutes till the pineapple turns golden brown.
  • Whisk the yogurt till it is smooth. Add the remaining ingredients (chili powder, pepper powder, black salt, roasted cumin powder, and mint leaves) and mix well.

¼ cup pomegranate arils (- optional)
½ teaspoon red chili powder (or cayenne pepper or paprika)
1 teaspoon roasted cumin powder
1 to 2 tablespoons sugar (or add as per taste)
salt (or edible, food grade rock salt ot black salt as required)
1 to 2 tablespoons chopped coriander leaves ((cilantro) - for garnish)

Steps:

  • With a wired whisk, whip the curd till its smooth.
  • Add the spice powders, sugar and salt to the curd. Mix well.
