PIONEER WOMAN'S SPICY ROASTED CHICKEN LEGS

Great recipe from PW. I couldn't find any hot salt so I tried a recipe for it that I found on the internet but next time I will just use salt and Cajun seasoning. PW says if you don't want to use hot salt use any seasoning you like. I didn't bother with broiling the legs, they looked just fine right out of the oven.

  • Melt butter in a medium saucepan. Add the lemon juice and hot salt to the butter. Using tongs, dip chicken legs one at a time into the butter mixture, coating all sides. (You may need to tip the pan to get all the legs coated towards the end.) Place legs on the baking rack. Brush the remaing butter mixture on the legs with a pastry brush. Sprinkle with more hot salt.

PIONEER WOMAN'S SPICY BEANS

Pioneer Woman's Spicy Beans image

Wonderful meal on a cold winter day. Serve it over hot, buttered cornbread. We especially like Recipe #83625, which is just the right amount of sweetness to balance all the spicy. Top with grated cheddar cheese and a dollop of sour cream. Just a note: many people soak their beans the night before. I prefer to skip that step and think the bean broth is much more tasty when slow cooked for hours. Delicious!

Time 4h10m

Yield 12 serving(s)

Number Of Ingredients 9

4 cups dry pinto beans
1 ham hock, whole

2 red bell peppers, Diced
4 garlic cloves, Minced
2 jalapenos, Sliced

2 teaspoons chili powder (optional)
2 teaspoons black pepper, More To Taste

Steps:

  • Rinse beans under cold water, sorting out any rocks/particles.
  • Place beans in a stock pot with the ham hock and cover with water by 2 inches. Bring to a boil, then reduce to a simmer. Cover the pot and simmer for 2 hours, checking occasionally to make sure the water level is fine. Add more water as needed.

ROASTED LEMON CHICKEN LEGS {PIONEER WOMAN} RECIPE - (2.9/5)

Roasted Lemon Chicken Legs {Pioneer Woman} Recipe - (2.9/5) image

Provided by grinder

Number Of Ingredients 5

24 chicken legs
6 lemons
1/2 cup olive oil
4 cloves garlic, pressed
Salt and fresh ground black pepper

Steps:

  • Put legs in a large re-sealable bag, squeeze in juice of the lemons and throw in the rinds as well. Add olive oil, garlic and some salt and pepper, seal bag and toss around. Place in the fridge to marinate at least 30 minutes or up to 6 hours. Preheat oven to 450ºF. Place legs on a baking sheet and roast until the juices run clear, 20-30 minutes.

Tips:

  • Use a variety of spices: This recipe calls for a blend of paprika, cumin, chili powder, garlic powder, onion powder, and cayenne pepper, but you can adjust the spices to your liking. Some other good options include oregano, thyme, rosemary, and black pepper.
  • Make sure the chicken is evenly coated in spices: The best way to do this is to toss the chicken legs in a bowl with the spices until they are completely coated.
  • Don't overcrowd the baking sheet: If you overcrowd the baking sheet, the chicken legs will not cook evenly. Make sure there is enough space between each leg so that the air can circulate.
  • Roast the chicken legs until they are cooked through: The chicken legs are done cooking when they reach an internal temperature of 165 degrees Fahrenheit. You can check the temperature with a meat thermometer.

Conclusion:

This Pioneer Woman's Spicy Roasted Chicken Legs recipe is an easy and delicious way to make chicken. The chicken is tender and juicy, and the spices give it a nice kick. This recipe is perfect for a weeknight meal or a casual get-together. It can be served with a variety of sides, such as mashed potatoes, rice, or roasted vegetables.
