BASIC PIZZA SAUCE

Provided by Food Network

Categories     main-dish

Time 40m

Yield about 3 cups, or enough for 2

Number Of Ingredients 9

1 can (28-ounces) whole peeled tomatoes, in juice
1 small white or sweet onion, finely diced and minced
1 clove garlic, peeled and minced
3 to 4 fresh basil leaves
1 teaspoon dried oregano
Pinch salt
Pinch fresh ground black pepper
Pinch sugar, optional
2 tablespoons olive oil, to saute

Steps:

  • Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.

Tips:

  • Use high-quality tomatoes: The type of tomatoes you use will make a big difference in the flavor of your sauce. Choose fresh, ripe tomatoes that are in season. If you can't find fresh tomatoes, you can use canned tomatoes, but make sure to choose a brand that uses high-quality tomatoes.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and sweetness. If you have the time, roast your tomatoes before making your sauce. You can also roast a batch of tomatoes and freeze them for later use.
  • Use a variety of herbs and spices: Herbs and spices add flavor and complexity to pizza sauce. Some popular herbs and spices to use include basil, oregano, thyme, garlic, and onion. You can also experiment with other herbs and spices, such as rosemary, fennel, and red pepper flakes.
  • Simmer your sauce for a long time: Simmering your sauce for a long time allows the flavors to meld and develop. The longer you simmer your sauce, the better it will taste. Aim to simmer your sauce for at least 30 minutes, but you can simmer it for up to 2 hours.
  • Taste your sauce and adjust the seasonings as needed: Once your sauce is done simmering, taste it and adjust the seasonings as needed. You may need to add more salt, pepper, herbs, or spices. You can also add a pinch of sugar to balance the acidity of the tomatoes.

Conclusion:

Making pizza sauce from scratch is easy and rewarding. With a few simple ingredients and a little time, you can make a delicious pizza sauce that will impress your family and friends. So next time you're making pizza, skip the store-bought sauce and make your own. You won't be disappointed.
