OLD FASHION YELLOW PLUM PRESERVES

Old Fashion Yellow Plum Preserves image

Here is a traditional recipe that you can alter to your preference. As kids, we would pick wild plums and Mom would boil for about 12 minutes and pour into sterilized jars. She even left the pits in and it was the only thing that slowed us down! The preserves were plums suspended in a thick syrup that was amazing on ice cream or served with cream and toast. Cook it a little longer and you will have a jam consistency. You can also substitute the yellow plums for Italian plums. Add a little 4 tablespoons brandy just before placing into jars if you are not planning to serve this to minors!

Categories     Homemade Jam

Time 6h40m

Yield 7 half pints

Number Of Ingredients 3

3 cups peeled, chopped peaches
5 cups chopped tart plums
6 cups sugar

Steps:

  • Combine the fruit and sugar in a large mixing bowl. Stir to mix well.
  • Cover and let sit at room temperature for 6 hours, or up to 24 hours in the refrigerator.
  • Spoon into a large Dutch oven.
  • Bring slowly to a boil, stirring frequently.
  • Boil gently until the fruit becomes almost clear and the syrup is thick, 40 - 50 minutes, stirring often to prevent sticking.
  • Ladle into clean, ½ pint jars. Cover with two-piece caps.
  • Process in a water bath canner for 15 minutes.

Tips:

  • To ensure the best quality preserves, use ripe, blemish-free plums.
  • If desired, remove the skins from the plums before cooking. This will give the preserves a smoother texture.
  • To prevent the preserves from crystallizing, add a small amount of butter or margarine during cooking.
  • To test if the preserves are ready, place a small amount on a chilled plate. If it wrinkles when pushed, the preserves are ready.
  • Store the preserves in sterilized jars in a cool, dark place.

Conclusion:

Plum preserves are a delicious and versatile way to enjoy the taste of plums all year long. Whether you spread them on toast, use them as a filling for pies and pastries, or simply enjoy them by the spoonful, plum preserves are sure to please.
