½ cup plain yogurt
¼ cup Dijon mustard
1 tablespoon honey
¼ cup fresh lemon juice
3 tablespoons chopped fresh dill
1 pound salmon
1 cup white wine
½ cup water
¼ cup chopped shallots

Steps:

  • In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
  • In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. Cover the saucepan, and cook 10 to 12 minutes, until salmon is easily flaked with a fork. Drain, and serve with the yogurt sauce.

This has been a hit with all family members! We enjoy it served with fresh green beans or broccoli and a large salad. This is a dish we used to pay dearly for in a restaurant but now that I figured out how to make it at home we save lots of money!

3 -4 lbs salmon fillets
1 1/2 cups chicken broth
2 stalks celery
1/2 medium onion
4 tablespoons butter
4 tablespoons flour
1/2 teaspoon salt
2 cups milk (I prefer whole)
8 ounces monterey jack cheese, shredded
1 (6 ounce) can crab
2 (6 ounce) cans baby shrimp

Steps:

  • In a large skillet (I use my electric skillet), simmer chicken broth, celery pieces (about 3 inches long) and onion slices.
  • I use the vegetable pieces to make sort of a"trivit" under the salmon, so make them chunky.
  • Simmer for about 15 minutes.
  • Lay the fillet over vegetables, tucking under the tail end and continue to simmer until done through, about 30 minutes.
  • Make sure it is flaky and done all of the way through by seperating the fish with a fork.
  • If it is still bright orange, simmer longer.
  • Meanwhile make the sauce by melting the butter then adding the flour.
  • Cook for about 1 minute, then gradually add the milk.
  • Heat through but do not boil.
  • Once hot, gradually add the cheese and stir until it is all melted.
  • Add the crab and shrimp, heating gently until hot.
  • Remove the fish from the skillet and discard the broth and vegetables.
  • Serve the fish and sauce seperately as some like more sauce than others.

4 sprigs rosemary, divided, plus extra for garnish
⅞ teaspoon fine sea salt, divided
4 (6 ounce) skinless salmon fillets, bones removed
1 cup heavy cream

1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • In a large saucepan or high-sided skillet, combine 5 cups water, vinegar, 3 sprigs rosemary and 1/2 teaspoon salt and bring to a boil. Reduce heat to medium and simmer 10 minutes. Season both sides of salmon with 1/4 teaspoon salt. Place salmon skin-side down in the pan of simmering liquid and cook, adjusting heat to maintain a light simmer. I have changed it slightly to adapt to a less expensive version. It is really good with any kind of fish...but my favorite is with fresh salmon. If you read the entire recipe you will see that although it looks complicated at first glance it really is very easy and quick to make. Preparation time includes thickening time of cooking the sauce.

8 fish fillets
1/2 cup milk
1 teaspoon salt
1/4 teaspoon black pepper
2 (6 1/2 ounce) cans shrimp, drained
1/3 cup margarine
1/2 cup flour
2 teaspoons salt
1/2 teaspoon black pepper
1 1/2 teaspoons sweet paprika
1 teaspoon parsley flakes
1 1/2 quarts half-and-half
1 (4 ounce) can mushrooms

Steps:

  • Sauce:Melt margarine in a saucepan over low heat.
  • Stir in flour then gradually add the half and half.
  • Cook over medium heat until thickened, stirring constantly.

1/4 teaspoon cumin seeds
1 pound Yukon Gold potatoes (about 2 medium), finely chopped
1-1/4 teaspoons salt, divided
1/8 teaspoon plus 1/4 teaspoon ground turmeric, divided

4 salmon fillets (1 inch thick and 4 ounces each)
8 fresh dill sprigs
