1 bok choy, cut acrossin 2" sections
8 green onions, cut in 2" lengths

Steps:

  • Wash chick peas and soak overnight (or use a can of Garbanzo beans).
  • In one pan put in the chick peas chicken, pork, chorizo and add water to cover.
  • Add sliced onion, salt& peppercorns, bring to a boil.
  • Reduce heat and simmer until meats and chick peas are almost tender.
  • In another pan heat oil and fry garlic with the chopped onion on low heat, stirring frequently until golden brown.
  • Add tomatoes and cook to a pulp.
  • Add meats, stock& sweet potatoes.
  • Simmer until potatoes are nearly cooked then add cabbage& green onions for the last few minutes.
  • Serve broth as soup and the meats& vegetables as a separate course.

Tips:

  • Choose the right cut of beef: For a tender and flavorful broth, use a chuck roast, brisket, or short ribs. These cuts have a good amount of marbling, which will help to flavor the broth.
  • Brown the beef before simmering: Browning the beef in a hot pot or pan before adding it to the soup pot will help to develop its flavor and color.
  • Add vegetables and herbs to the broth: Vegetables like carrots, celery, onions, and garlic add flavor and depth to the broth. Herbs like thyme, rosemary, and parsley also add flavor and complexity.
  • Simmer the soup for at least 2 hours: The longer you simmer the soup, the more flavorful it will become. Simmer the soup for at least 2 hours, or up to 4 hours for a richer flavor.
  • Season the soup to taste: Once the soup is finished simmering, season it to taste with salt and pepper. You can also add a splash of red wine or vinegar for a bit of acidity.
  • Serve the soup with your favorite toppings: Pochero is traditionally served with rice, but you can also serve it with noodles, potatoes, or bread. You can also top the soup with chopped parsley, cilantro, or green onions.

Conclusion:

Pochero is a delicious and hearty soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. Experiment with different vegetables, herbs, and spices to create a soup that is uniquely yours.
