1 tablespoon dry polenta
1 teaspoon coarse sea salt
1/2 teaspoon pepper
1/4 cup olive oil
2 tablespoons finely chopped fresh herbs
2 tablespoons finely chopped garlic

Steps:

  • Heat oven to 425°F. Cut potatoes into medium-size chunks (about 8 pieces per half-potato). Place potatoes in 2-quart saucepan of salted water. Heat to boiling. Reduce heat to medium-high; simmer 10 minutes or until potatoes are fork-tender.
  • Drain potatoes; place in large bowl. Gently toss potatoes with polenta, sea salt and pepper.
  • Heat large cast-iron skillet over high heat. Add olive oil; swirl to coat. When oil is hot, add herbs; cook 1 minute. Add potatoes, scattering in even layer in skillet. Place skillet to oven.
  • Bake 10 to 15 minutes or until bottoms are golden and crisp. Turn potatoes; sprinkle with garlic. Bake 10 minutes longer or until crisp on both sides.
  • Using slotted spoon, transfer potatoes to serving bowl or plate.

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

8 1/2 cups spring water
2 teaspoons sea salt
2 1/2 cups yellow corn grits
2 heads roasted garlic, removed from cloves and creamed into a paste
1 tablespoon olive oil

Steps:

  • In a heavy bottom pot, bring 5 cups of water and sea salt to a boil. Mix together the remaining 3 1/2 cups of water and corn grits in a bowl. When the pot of water comes to a boil, add the cornmeal mixture and stir quickly and continuously until the entire mixture is well blended. Add the roasted garlic paste. Reduce the heat so that the polenta is at a low simmer, stirring frequently. Continue to do so until the polenta pulls away from the pot (about 35 minutes). Pour the polenta into a baking sheet to cool. Cut into desired shape (squares for the Napoleon) and pan fry in olive oil until golden in color.
  • To build the Polenta Napoleon:

7 1/2 pound oven roaster or capon
1 cup fresh herbs on stalks or 1 tablespoon dried thyme, rosemary and tarragon
5 to 6 whole garlic cloves in skins
1 cup liquid (water, broth, wine or a combo) for deglazing
1 tablespoon unsalted butter
Salt and freshly ground black pepper
1/4 cup chopped parsley
2 pounds Yukon Gold potatoes, scrubbed clean and cut in 1/4th lengthwise so they are more like wedges

Steps:

  • Remove wing tips (save for stock) and cut out wish bone. Preheat the oven to 500 degrees. Remove giblet package (save all but liver for stock pot). Pat the capon dry. Remove fat from tail and neck of chicken. Stuff cavity with herbs and garlic cloves. Season skin with salt and immediately set roaster in pan and set in oven.
  • After 15 minutes, remove the pan from the oven (making sure to close oven door), give bird a shake so it does not stick to bottom of pan and return to oven for 30 minutes. Meanwhile, scrub potatoes clean, leave skin on and cut, lengthwise into quarters so you have long potato wedges. Remove bird from oven again (making sure to close oven door) and scatter however many potatoes will fit on bottom of pan; set those which don't fit in an iron skillet with 1/8th inch of water on the bottom of skillet.
  • Return bird and potatoes to oven and roast for an hour more. Remove bird from oven and transfer to carving board; let rest for 20 minutes. Strain out juices and discard fat. Return juices to roasting pan. Scoop herbs and garlic out of bird cavity and add to roasting pan. Reduce juices by half. Season with salt and pepper. With slotted spoon, remove herbs and garlic. Right before serving whisk in butter and parsley.
  • Slice legs and breast and transfer to platter. Surround pieces of poultry by roasted potatoes. Serve gravy separately; serve also with salad on the same plate. After dinner, remove all skin and fat from what remains of bird. Remove flesh from the bones and store, tightly wrapped in plastic, in the refrigerator. Keep bones for a quick stock.

  • Heat oven to 425 degrees. Wrap garlic in foil, or place in garlic roaster, and roast until garlic is turning golden and head is soft, about 1 hour. Let stand until cool enough to handle. Slice off tip of head, just enough to expose cloves; press out garlic, using back of knife to help. Discard garlic skin; transfer garlic to small bowl. Add 1 1/2 tablespoons oil, 1 teaspoon salt, and 1/4 teaspoon pepper. Smash together with back of teaspoon to create thick paste.
  • Raise oven to 475 degrees. Slice each potato into three or four one-inch-thick pieces. Spread a generous amount of paste between each slice; reassemble potato, pressing on chunks so potato sticks together. Set potato on a piece of foil, drizzle with 2 teaspoons oil, and salt and pepper to taste. Wrap potato tightly in foil; repeat process with other potatoes. Bake potatoes on baking sheet until they are soft and have a caramelized roasted-garlic crust on the bottom, about 1 hour and 10 minutes. Serve on bed of fresh thyme.

2 garlic cloves, chopped
2 shallots, chopped
2 cups vegetable stock (or chicken)
2/3 cup finely ground polenta (cornmeal)
1 ounce soft mild goat cheese
1/4 cup heavy cream
salt and pepper
2 teaspoons unsalted butter
1 tablespoon chopped fresh herb (such as basil, thyme, rosemary)

Steps:
