Time 15m

Number Of Ingredients 5

1/2 cup sugar
1/4 cup salt
1 pound halibut
1/2 cup butter ((sweet cream works great))
1 lemon

Steps:

  • In a medium to large pot bring 2 quarts of water, sugar, and salt to a boil.
  • Cut halibut into 2-3 large pieces (so it cooks faster) and add to water.
  • Boil for about 10 minutes or until halibut is nice and flaky.
  • In the meantime, melt butter in a pot, but do not boil.
  • Remove halibut from water, squeeze a little fresh lemon on it and serve with melted butter (I like to completely submerge my halibut in the melted butter, much like you would do with lobster).

Number Of Ingredients 5

1 lb. frozen haddock, cut in lg. pieces (frozen cod or pollock can be used)
2 c. water
1 tbsp. vinegar
1 tsp. salt
1 tsp. seafood seasoning (Old Bay is good)

Steps:

  • In a 4 quart pot add salt, seafood seasoning to water and vinegar; bring mixture to a boil. Add frozen fish. Simmer 15-20 minutes. Drain and serve with melted butter.

Tips:

  • Use fresh haddock fillets. Fresh haddock has a mild, sweet flavor and a firm texture that holds up well to cooking. If you can't find fresh haddock, frozen haddock fillets can also be used, but thaw them completely before cooking.
  • Season the haddock fillets liberally. Season the haddock fillets with salt, pepper, and paprika before dredging them in flour. This will help to enhance the flavor of the fish.
  • Dredge the haddock fillets in flour. Dredging the haddock fillets in flour helps to create a crispy crust. Make sure to coat the fillets evenly with flour.
  • Pan-fry the haddock fillets in butter. Pan-frying the haddock fillets in butter gives them a rich, golden-brown crust. Use a large skillet and cook the fillets over medium heat. Don't overcrowd the skillet or the fillets will steam instead of fry.
  • Serve the haddock fillets with melted butter and lemon wedges. Melted butter and lemon wedges are the classic accompaniments to poor man's lobster. You can also serve the fillets with tartar sauce, cocktail sauce, or your favorite dipping sauce.

Conclusion:

Poor man's lobster is a delicious and affordable dish that is easy to make. It's a great way to enjoy the flavor of lobster without the high price tag. With a few simple ingredients and a little bit of time, you can make a meal that your family and friends will love.
