PORK CHOPS IN GARLIC MUSHROOM SAUCE

Pork Chops in Garlic Mushroom Sauce image

This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

1 teaspoon Dijon mustard
2 tablespoons all-purpose flour

PORCUPINES IN MUSHROOM SAUCE

Porcupines in Mushroom Sauce image

Another family recipe - I noticed that all of the recipes for porcupines use a tomato sauce, and thought I'd post our alternative. Cooking the meatballs in the microwave gets rid of a lot of fat - I also cook meatballs for spaghetti in this fashion. I've made this with reduced-fat cream of mushroom soup and with ground turkey - both work well, and don't have much effect on the final dish. Prep time includes time to microwave the meatballs

Categories     Rice

Time 1h20m

Yield 4 serving(s)

Number Of Ingredients 6

1 lb ground beef
1 egg
1/4 cup onion, minced finely
1/2-3/4 cup uncooked rice
salt and pepper
2 cans cream of mushroom soup

Steps:

  • Combine the hamburger, egg, onion, rice, salt, and pepper and blend well.
  • Form into small meatballs.
  • Place meatballs in a glass pie dish and cover with a microwave-safe plate.
  • Microwave on high for 9 minutes.
  • When done remove from microwave carefully (it will be very hot, and will make a lot of steam when you remove the cover plate).
  • Pour the fat out and discard.
  • Oooh, look at all the fat you got rid of!
  • Combine the 2 cans of soup with 1/2 cup water in a crockpot.
  • Add the meatballs and cook for 1-2 hours or until the rice has softened (not to long, though, or the rice will absorb all of the moisture and you'll just have one large mass).
  • Serve over mashed potatoes.

Yield Makes about 2 cups

Number Of Ingredients 12

1 1/2 ounces dried porcini mushrooms
1 cup warm water
2 tablespoons olive oil
1 cup chopped onion
2 garlic cloves, minced
1/2 cup dry Marsala
1/2 cup dry white wine

Increase heat; boil until most liquid evaporates, about 7 minutes. Add rosemary, mushrooms and both stocks. Pour in reserved mushroom liquid, leaving any sediment behind. • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and avoid any scrambling.
  • Brown the porcupines: Browning the porcupines before adding them to the sauce helps to develop their flavor and give them a crispy texture.
  • Use a variety of mushrooms: Feel free to use a variety of mushrooms in this dish, such as cremini, shiitake, or oyster mushrooms. This will add depth and complexity to the sauce.
  • Don't overcook the porcupines: Porcupines are a delicate protein, so be careful not to overcook them. Overcooked porcupines will be tough and chewy.
  • Serve immediately: This dish is best served immediately after it is made. The porcupines will start to lose their crispiness if they sit for too long.

Conclusion:

This Porcupines in Mushroom Sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The porcupines are tender and juicy, while the mushroom sauce is rich and flavorful. Serve this dish with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.
