Southern Style Smothered Pork Chops with Buttermilk Gravy- Dee Dee's image

These smothered pork chops are simply wonderful! We enjoyed these with mashed potatoes, fresh field peas, scalloped tomatoes and some nice fresh crusty french bread. Even though my photo only shows 2 chops, this recipe is for 4. I cut down the portions when I'm just cooking for 2.

Number Of Ingredients 12

1 c all purpose flour
2 Tbsp onion powder
2 Tbsp garlic powder
1 tsp salt
1 tsp cayenne pepper
1/2 tsp pepper, freshly ground
4 pork chops, 3/4-inch thick, bone in
1/4 c olive oil
1 c chicken broth
1/2 c buttermilk
chopped fresh flat-leaf parsley, for garnish
chopped fresh green onion, for garnish

Steps:

  • 1. Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess. RESERVE THE LEFTOVER SEASONED FLOUR MIXTURE FOR THE GRAVY.
  • 2. Heat a large sauté pan or cast iron skillet over medium heat and coat with the oil. I usee an iron skillet, it's heavy and you can count on an even heat. I'm pretty sure it's a southern thang as well.
  • 3. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 to 4 minutes on each side until golden brown.
  • 4. Remove the pork chops from the pan and add a little sprinkle of seasoned flour (about 2 spoonfulls) to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper; garnish with chopped parsley and/or chopped green onions before serving.

Simple, quick and tasty. Something I threw together with the 'scraps' in my Fridge and surprised me with how great it tasted. Feel free to remove as much 'fat' from the pan as you need to... the more you leave, the better it tastes! Great with mashed potatoes!

2 pork chops
1/2 medium onion (diced)
1 -2 slice bacon
2 tablespoons butter
2 tablespoons cornstarch
3/4 cup water
salt & pepper

Steps:

  • In 12" skillet, cook bacon on med hi heat. Remove bacon from skillet, but leave bacon drippings.
  • Add 1 TBSP butter and diced onion. When transparent, remove from skillet.
  • Reduce heat to medium, lightly salt and pepper both sides of pork chops and place in skillet. Brown both sides (approx 2-4 minutes each).
  • Chop up bacon, and add both bacon and cooked onion to skillet.
  • Add 3/4 cup water (add more if you want more gravy), 1 TBSP butter, cover and simmer until cooked (5-10 minutes - but can simmer for up to 45 minutes easily).
  • Just before serving, mix 2 TBSP cornstarch with cool tap water (approx 1/4 cup).
  • Place pork chops on plates, add corn starch/water mixture to gravy/drippings in skillet and bring to quick boil stirring frequently to form thick gravy.

I came up with this recipe when I was craving something to remind me of growing up in Georgia. Remember to taste before adding additional salt as the soup mix is pretty salty. Serve over white rice, mashed potatoes, or buttered noodles.

2 tablespoons vegetable oil
1 (1 ounce) package dry onion soup mix
6 boneless pork chops
¾ cup white wine
½ cup heavy cream
1 tablespoon garlic powder
salt and ground black pepper to taste

Steps:

  • Heat the oil in a large, deep skillet over medium heat. Liberally sprinkle the onion soup mix over both sides of the pork chops. Fry the pork chops in the hot oil until the pork is no longer pink in the center, 4 to 6 minutes per side. Remove the chops from the skillet, and set aside.
  • Pour the white wine into the pan; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Reduce heat to low. Stir the heavy cream, and season with garlic powder and salt and pepper. Gently lay the pork chops in the pan, turning to coat in the sauce. Simmer until thoroughly reheated, 5 to 10 minutes.
