1 medium onion

1/4 cup seasoned fine dry breadcrumb

  • Preheat oven to 400°; brush a 13 x 9 inch baking dish with olive oil.

2 tablespoons grapeseed oil
1/2 cup chopped onions
2 cloves garlic
1/2 cup chicken stock
2 tablespoons unsalted butter
3 to 5 Yukon gold potatoes, peeled and cut in large cubes
1 cup heavy cream, warmed
1 stick (4 ounces) unsalted butter
Kosher salt and freshly ground black pepper

1/2 cup minced onions
8 cups cremini mushrooms, quartered
1/2 bunch fresh thyme, chopped
1 cup Madeira wine

Flip and cook on the other side until the internal temperature reaches 155 degrees F, another 4 minutes. Remove the pan from the heat, drain off any excess oil and deglaze with the Madeira, leaving the pork in the pan. Return to the heat and cook off the alcohol for about 2 minutes. Reserve.
