1 red pepper, deseeded and sliced
1 yellow pepper, deseeded and sliced
1 garlic clove, crushed
1⁄4 tsp chilli powder
1 heaped tsp sweet smoked paprika
1⁄2 tsp dried oregano
1 tsp ground coriander

80ml double cream
350g penne or rigatoni pasta
1⁄2 small bunch of flat-leaf parsley, finely chopped
grated parmesan or cheddar, to serve

Steps:

  • Heat the oil in a large shallow casserole or frying pan. Add the chicken and fry for 5 mins over a medium heat until golden all over. Remove and set aside on a plate.

Tips:

  • Use a quality cut of pork: Pork tenderloin or loin are both good choices for fajita pasta. Look for meat that is well-marbled and has a good amount of fat, as this will help keep it moist during cooking.
  • Slice the pork thinly: This will help it cook quickly and evenly. Aim for slices that are about 1/4-inch thick.
  • Marinate the pork: Marinating the pork in a flavorful mixture of spices and herbs will help to tenderize it and add flavor. You can use a store-bought marinade or make your own. Just be sure to marinate the pork for at least 30 minutes, or up to overnight.
  • Cook the pork over high heat: This will help to sear the meat and lock in the juices. You can cook the pork in a skillet, on a grill, or even in the oven. Just be sure to keep the heat high and cook the pork until it is cooked through.
  • Use a variety of vegetables: Fajita pasta is a great way to use up leftover vegetables. Some good choices include bell peppers, onions, zucchini, and corn. You can also add some mushrooms or spinach for extra flavor and nutrients.
  • Cook the vegetables until they are tender-crisp: You don't want the vegetables to be mushy, so cook them just until they are tender but still have a little bit of crunch.
  • Use a flavorful sauce: The sauce is what really brings fajita pasta together. You can use a store-bought sauce or make your own. Just be sure to choose a sauce that is flavorful and has a bit of a kick. You want to have a balanced flavor profile, with a combination of salty, sweet, spicy, and tangy elements.
  • Serve the pasta with your favorite toppings: Some good choices include sour cream, guacamole, salsa, and shredded cheese. You can also add some extra cilantro or lime wedges for garnish.

Conclusion:

Pork fajita pasta is a delicious and easy-to-make meal that is perfect for busy weeknights. It is a great way to use up leftover pork and vegetables, and it can be customized to your own liking. With its bold flavors and variety of textures, fajita pasta is sure to be a hit with the whole family.
