4 center cut boneless pork chops, about 1-inch thick (about 1 1/4 pounds total)
Kosher salt and freshly ground black pepper
4 ounces mixed sliced mushrooms
1/2 red onion, chopped
1 garlic clove, finely chopped
1/4 cup brandy or white wine
1/4 cup low-sodium chicken broth
3 tablespoons sour cream
1 tablespoon chopped fresh flat-leaf parsley
Steamed green beans, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F. Heat 1 tablespoon of the oil in a medium skillet over medium-high heat. Sprinkle the pork chops all over with salt and pepper and cook, flipping once, until golden brown, 2 to 3 minutes per side. Transfer to a baking sheet lined with foil and bake until cooked through and but still slightly pink inside, about 5 minutes.

2 tablespoons all-purpose flour
1 1/2 tablespoons extra-virgin olive oil
12 ounces cremini or white mushrooms, thinly sliced
3 cloves garlic, thinly sliced
1 bunch scallions, whites sliced, greens cut into 2-inch pieces
1/2 cup low-sodium chicken broth
2 tablespoons low-fat sour cream
3/4 cup chopped fresh parsley
Cornbread, for serving (optional)

Steps:

  • Season the pork chops with salt and pepper; sprinkle all over with 1 1/2 tablespoons flour. Heat 1/2 tablespoon olive oil in a large nonstick skillet over medium-high heat. Working in 2 batches, add the chops and cook until golden and just cooked through, 3 to 4 minutes per side, adding 1/2 tablespoon olive oil to the skillet between batches. 6 tablespoons butter, divided
1/2 pound sliced fresh mushrooms
2 tablespoons lemon juice

1 can (10-1/2 ounces) condensed beef broth, undiluted

1 tablespoon butter
1 clove garlic, pressed
6 pork chops
salt and pepper to taste
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt the butter in a large skillet over medium heat. Add garlic, and saute until fragrant. Season pork chops with salt and pepper, then fry them in the skillet just until browned on both sides, about 3 minutes per side. Remove the pork chops to a baking pan or Dutch oven.
  • Pour the mushrooms into the skillet with the pork drippings and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, then pour over the pork chops in the baking pan. Cover with a lid, or aluminum foil.

4 bone-in pork chops
1 teaspoon garlic salt
1 teaspoon ground black pepper

2 tablespoons water

I threw this dinner together one night with items that I had on hand. It turned out to be a lovely dinner that was appreciated by all. Herbes De Provence is a wonderful spice that can liven up chicken, salad, potatoes, and veggies. It is a staple in my kitchen, and an important ingredient in this recipe, to really liven up the green beans. Please note that, even though this recipe normally serves two, you could easily throw in four pork loin chops. Please enjoy!

2 pork loin chops
1 (10 1/2 ounce) can mushroom gravy
1 small onion, chopped
8 ounces fresh sliced mushrooms
1 (14 ounce) can green beans, drained
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon herbes de provence
1 tablespoon olive oil
bacon bits
additional salt and pepper, to taste

Steps:

  • In a medium bowl, mix together salt, pepper, cumin, and cayenne pepper.

2 tablespoons olive oil
1 red onion, thinly sliced
1/2 cup mushroom, thinly sliced
2 garlic cloves, finely chopped
4 pork loin chops
1/2 cup self rising flour
salt and pepper
2 cups chicken stock (cube is fine)
2 tablespoons cold water
1 tablespoon flour (leftover from dredging)

Steps:

  • Heat olive oil in large fry pan.
  • Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
  • Add garlic and cook 1 minute.
  • In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
  • With a slotted spoon, remove the veggies from the pan and set aside.
  • Brown the chops about 2-3 minutes each side and remove from the pan.
