BRAISED RED CABBAGE WITH APPLES
This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

- Braising Liquid: Use a combination of flavorful liquids to create a rich braising liquid. Apple cider, chicken broth, and red wine are all good choices.
- Seasoning: Don't be afraid to season the pork roast liberally with salt, pepper, and other herbs and spices. This will help to enhance the flavor of the meat.
- Slow and Low Cooking: Pork roast is a tough cut of meat, so it benefits from slow and low cooking. Braising the roast for several hours will help to break down the connective tissue and make the meat tender.
- Rest the Meat: Once the pork roast is cooked, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the meat, making it more tender and flavorful.
