1 granny smith apple, cored and cut into 12 slices
12 pitted gaeta olives
1/4 cup vodka
1 cup meat stock
2 teaspoons heavy cream
1 sprig thyme

Steps:

  • Add oil to skillet.
  • Season tenderloins with salt and pepper; brown on all sides.
  • Remove and let the meat rest for 10 minutes.
  • Reduce heat, add apple and olives and cook until caramelized, 2-3 minutes.
  • Cut pork into 2 inch medallions, add back to pan; brown about 2 minutes per side.

Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
2 baking apples (such as McIntosh)
1 1/2 tablespoons unsalted butter
1 medium shallot, finely chopped
1 cup quick-cooking barley
1 tablespoon finely chopped fresh parsley
1/4 cup apple cider
1 tablespoon apple cider vinegar

Steps:

  • Preheat the oven to 400 degrees F. Sprinkle the pork with the pumpkin pie spice, 1/2 teaspoon salt, and pepper to taste. Heat the olive oil in a large ovenproof skillet over medium-high heat. Add the pork and cook, turning, until browned on all sides, about 6 minutes.

2 (1 pound) pork tenderloins, cut in 1/2 crosswise
Vegetable oil
Salt and freshly ground black pepper
1 1/2 cups apple cider
1/2 cup apple cider vinegar
1/4 cup maple syrup

Steps:

  • Heat oven to 500 degrees F and arrange rack in the upper third.
  • Pat pork tenderloins dry with paper towels, brush with oil, and season well with salt and freshly ground black pepper. Heat a large frying pan over medium-high heat. Add 2 pieces of pork tenderloin and cook until brown on all sides, turning occasionally, about 4 minutes. Set pork aside on a baking sheet and repeat with remaining pieces.

1/2 teaspoon arrowroot

  • Preheat oven to 425°F.
  • Pat tenderloins dry and season with salt and pepper. ½ sweet onion, diced
1 Gala apple, cut into chunks
½ cup Riesling wine
1 cup apple jelly
2 tablespoons balsamic vinegar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a baking dish large enough to hold the tenderloin without folding it.
  • Heat the olive oil in a large skillet over medium-high heat, and brown the pork tenderloin on all sides. Remove the browned tenderloin to the prepared baking dish. Sprinkle all sides of the meat with salt, pepper, and parsley.

1/2 cup heavy cream
2 tablespoons cold butter

  • Preheat oven to 450 degrees. Salt and pepper the pork. Spray a baking pan with nonstick spray and place the pork in it. Bake for 20 minutes, or until a meat thermometer registers 155 to 160 degrees. Remove from oven and place pork on a cutting board.

2 teaspoons vegetable oil, divided
1 teaspoon sea salt
2 tablespoons vegetable oil, divided, or more as needed
3 Granny Smith apples - peeled, cored, and sliced into eighths
2 medium sweet onions, sliced vertically
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves, divided
¼ teaspoon ground black pepper, or to taste
1 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).

1 tablespoon Dijon mustard
4 large Granny Smith apples, peeled, cored and each cut into 8 wedges
1/3 cup fresh lemon juice
1 tablespoon canola oil
1/4 cup heavy cream
Dijon mustard to taste

Steps:

  • Heat oven to 500 degrees.
  • Place tenderloins in roasting pan 14 by 12 by 2 inches. Season with salt and pepper to taste. Rub each with 1 1/2 teaspoons mustard. 1 tablespoon salt
