Porketta is a succulent Italian dish that involves slow-roasting a pork loin or belly until it is crispy on the outside and melt-in-your-mouth tender on the inside. A traditional porketta recipe uses a boneless pork loin or belly, which is seasoned with herbs, garlic, and salt. The pork is then rolled and roasted until it reaches an internal temperature of 145 degrees Fahrenheit. While the traditional method involves roasting porketta in a wood-fired oven, it can also be cooked in a regular oven.
