5 cups chicken stock
1 pound linguica sausage or smoked sausage, thinly sliced
2 cans (14-1/2 ounces each) petite diced tomatoes, undrained
1 large onion, halved and thinly sliced
1 large sweet red pepper, thinly sliced
2 celery ribs, thinly sliced
2 medium carrots, thinly sliced
1 cup dry white wine or additional chicken stock
4 garlic cloves, minced
2 bay leaves
1 orange zest strip (3 inches)
1 lemon zest strip (3 inches)
1 tablespoon sweet paprika
1 tablespoon hot pepper sauce
1 teaspoon dried savory
1 teaspoon dried thyme
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped green onions
1/2 cup minced fresh cilantro
1/2 cup minced fresh parsley

Steps:

  • Place the first 20 ingredients in a 7-qt. slow cooker. Cook, covered, on low 7-9 hours or until vegetables are tender. Remove bay leaves and orange and lemon zest strips., Transfer 4 cups soup to a blender; cool slightly. Cover; process until smooth. Return to slow cooker; add green onions, cilantro and parsley. Heat through., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth if necessary.

1 (10 ounce) linguica sausage, sliced
1 onion, minced
2 quarts water
4 potatoes, peeled and cubed
2 celery rib, chopped
2 carrots, chopped

1 (8 ounce) can tomato sauce
1 clove garlic, minced
½ head cabbage, thinly sliced

Steps:

2 pounds spicy Portuguese sausage, sliced
1 pound ham hocks
1 onion, sliced
2 quarts water
2 carrots, diced
3 potatoes, diced
1 small head cabbage, chopped
1 (8 ounce) can tomato sauce
2 (15 ounce) cans kidney beans
1 (16 ounce) package macaroni

Steps:

  • In a large pot over low heat, combine sausage, ham hocks, onion and water. Cover and simmer 1 hour.
  • Remove ham hock from soup, remove meat, tear into small pieces, and return meat to pot. Stir in carrots, potatoes, cabbage and tomato sauce. Cover and continue cooking 60 to 90 minutes more.

½ pound chorizo sausage, chopped
¼ cup olive oil
2 carrots, chopped
1 cup chopped onion
5 stalks celery, chopped

Steps:

3 potatoes, peeled and diced
14 cups cold water
1 (19 ounce) can kidney beans or 1 (19 ounce) can romano beans, rinsed
1 whole onion
3 whole garlic cloves
2 tablespoons olive oil
2 tablespoons ketchup
2 teaspoons paprika
1/2 teaspoon ground cumin
1 teaspoon salt (or to taste)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1 dash ground cinnamon
1 1/2 cups dry macaroni noodles

Steps:

  • Peel the onions and garlic and place in cheesecloth, tie the cheesecloth into a bundle for easy removal later.
  • In a large pot, add all of the ingredients except for the pasta. Cook on medium heat just until the potatoes are slightly cooked.
  • Add the pasta and cook until pasta is al dente and potatoes are tender. Adjust salt and pepper to taste.
  • Remove the onion and garlic and serve.

1 lb dried white bean, rinsed and picked over (such as cannellini or great Northern)
1/2 lb bacon, cut into 1/2 inch wide pieces
2 cups yellow onions, chopped
1/2 cup celery, chopped
2 tablespoons shallots, minced
1 tablespoon minced garlic
2 bay leaves
1 teaspoon salt
1/4 teaspoon cayenne pepper
2 quarts chicken stock
3/4 lb cooked chicken, diced
1 cup freshly grated pecorino romano cheese

Steps:

  • Put the beans into a large pot.
  • Add water to cover by 2 inches and soak for at least 8 hours or overnight.
  • Then drain.
  • Fry the bacon in a heavy stockpot over medium-high heat until crisp, about 7 minutes.
  • Use a slotted spoon to lift onto paper towels to drain.
  • Pour off all but 2 tablespoons of the bacon fat from the pot.
  • Add the onions and celery and cook, stirring occasionally, until tender, about 4 minutes.
  • Add the shallots, garlic, bay leaves, salt and cayenne.
  • Cook, stirring occasionally, until the shallots soften, about 1 minute.
  • Add the beans to the pot with the stock, and bring to a boil.
  • Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender, about 1 1/2 hours.
  • Stir in the chicken and the reserved bacon and heat through.
  • Remove and discard bay leaves.

1 lb shelled fava beans (broad beans, 450g)
1 pint chicken stock (2 cups)
olive oil
salt (to taste)
pepper (to taste)
1 cup crouton

Steps:

  • Skin the fava beans (broad beans) and cook them in the chicken stock until they are soft and cooked though.
  • Blend, sieve or liquidize, the cooked mixture adding as little olive oil as possible to get a smooth consistency. Add pepper and salt to taste.

2 lbs Portuguese chourico (8-ounce-Gouveia )

2 tablespoons fresh minced garlic cloves
3 cups maui onions (Chopped)
2 cups celery (Chopped)
2 cups carrots (Chopped)
1 serrano pepper (Seeded, Chopped )
1 lb roma tomato (Seeded, Diced)
1/2 cup red table wine (*Bairrada Portuguese wine)
8 cups ham stock
4 cups yukon gold potatoes (Chopped)
1 lb dried fava beans (**Green, & shell removed)
2 tablespoons fresh sage (Chopped)
2 tablespoons fresh thyme (Chopped)
2 tablespoons fresh parsley (Chopped)
2 tablespoons fresh savory (Chopped)

Steps:

  • Heat 2-tablespoons oil in a Dutch oven. Add bay leaves, Gouveia Portuguese sausages, 1-teaspoon sea salt, 1-teaspoon black pepper and cook 4-6 minutes or until done. Add chopped garlic and sauté for a minute.
  • Add remaining oil, 2-cups onions, celery, carrots, Serrano pepper, Roma tomatoes, salt and black pepper. Saute vegetables 2-3 minutes.
  • Add *Portuguese Table wine and reduce by one half.
  • Add ham stock, Yukon gold potatoes and green fava beans to soup. Add fresh chopped herbs and stir soup.
  • Bring soup to a full boil and reduce to a simmer for 45 minutes or until beans are soft. Season with salt and pepper to taste.
  • Serve soup in warm bowls and place one sausage on top.
  • Garnish soup with Fresh Parsley Sprigs and Maui Onions.

1 cup dried red kidney beans
3 onions, chopped
2 garlic cloves, minced
1/4 cup bacon fat
6 small potatoes, diced
1 (5 1/2 ounce) can tomato paste
2 quarts water
2 bay leaves
1 teaspoon allspice
salt and pepper

  • Soak and boil the beans until they just start to soften (1.5 hours or so).
  • Saute onions and garlic in fat until slightly brown.

1 onion
4 celery stalks
4 tomatoes, skinned and seeded or
1x 28 oz can(s) diced tomatoes with liquid

2 oz olive oil
2 oz butter
1 1/4 tsp paprika
2 qt chicken stock
3 Tbsp tomato paste
2 chorizo sausages, cut into small pieces

Steps:

  • 1. Finely chop all vegetables, including tomatoes and the potatoes.
  • 2. Drain soaked beans, discarding liquid.
  • 3. Add olive oil and butter in a large pot. When oil is hot, add onion, carrot, celery and tomatoes. Saute but do not brown.
  • 4. Add chopped potatoes, paprika and chicken stock. When this reaches a boil, add kidney beans and turn down heat to a simmer. Add tomato paste.
  • 5. Let cook 45-60 minutes, stirring occasionally. When the beans are soft to the touch, add sausage and cayenne pepper. Season to taste.
