2 1/2 lbs chicken, cut into serving pieces
3 tomatoes, peeled, seeded and chopped
6 ounces smoked ham, thinly sliced and cut into 1/2 inch squares (lean)
8 small boiling onions
1 tablespoon Dijon mustard
1 large garlic clove, finely minced (or crushed)
6 tablespoons dry white wine
6 tablespoons tawny port or 6 tablespoons white port
salt and pepper, to taste
4 tablespoons butter
3 tablespoons brandy

Steps:

  • Preheat oven to 350F.
  • In a casserole, combine tomatoes, ham, onions, mustard, garlic, wine and port.
  • Season chicken pieces with salt and pepper then arrange on top of tomato mixture in a single layer.
  • Dot with butter.
  • Bake in preheated oven for 1 hour or until chicken is browned and tender.
  • Sprinkle with brandy.
  • To serve, spoon sauce over chicken.

4 medium yellow potatoes
2 Tbsp soy sauce
2 Tbsp butter
1 tomato, chopped and seeded
1 small onion, diced
2 portuguese chorizo (hard)
4 boneless skinless chicken breast
salt and pepper to taste
green olives

Steps:

  • 1. marinate chicken in soy sauce for about 20 mins. Slice chorizo and cube potatoes. Add potatoes to a 13 x 9 cake pan.
  • 2. Saute onion and tomato for 10 mins add chicken breast and brown for 10 mins on each side. Add sliced chorizo and saute about 5 mins. *make sure you add the juice from the pan .. it makes a flavor difference
  • 3. Pour chicken mixture over potatoes top with olives and bake 375 for about 25 mins or until potatoes are tender.
