This is the Portuguese Bean Soup that is sold at the annual Punahou Carnival which is always held in February. It it thick, and delicious! I found this recipe in the Honolulu Starbulletin and have used it with a large ham bone (leftover from Easter dinner) instead of ham hocks. Also, in Hawaii, we can find Portuguese sausage which is the same as linguica sausage.

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 15

3 potatoes, peeled and diced
14 cups cold water
1 (19 ounce) can kidney beans or 1 (19 ounce) can romano beans, rinsed
1 whole onion
3 whole garlic cloves
2 tablespoons olive oil
2 tablespoons ketchup
2 teaspoons paprika
1/2 teaspoon ground cumin
1 teaspoon salt (or to taste)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1 dash ground cinnamon
1 1/2 cups dry macaroni noodles

Steps:

  • Peel the onions and garlic and place in cheesecloth, tie the cheesecloth into a bundle for easy removal later.

  • Add the pasta and cook until pasta is al dente and potatoes are tender. Adjust salt and pepper to taste.
  • Remove the onion and garlic and serve.

Tips:

  • Soak the macaroni beans overnight or for at least 4 hours before cooking. This will help to reduce the cooking time and make the beans more tender.
  • If you don't have time to soak the beans overnight, you can use quick-soaking method. To do this, bring the beans to a boil in a large pot of water. Boil for 2 minutes, then remove from heat and let stand for 1 hour. Drain the beans and rinse them before using.
  • You can use any type of macaroni for this soup, but small pasta shapes like ditalini or elbow macaroni work best.
  • Add the macaroni to the soup during the last 10 minutes of cooking. This will prevent the pasta from becoming overcooked.
  • Season the soup to taste with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Serve the soup hot, garnished with fresh parsley or cilantro.
