2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cups sour cream
1/2 cup water
1/2 teaspoon pepper
2 packages (28 ounces each) frozen O'Brien potatoes
1 package (16 ounces) process cheese (Velveeta), cubed
2-1/2 cups cubed fully cooked ham

Steps:

  • Preheat oven to 375°. In a large bowl, mix soup, sour cream, water and pepper until blended. Stir in potatoes, cheese and ham., Transfer to 2 greased 2-qt. baking dishes. Bake, covered, 40 minutes. Uncover; bake 10-15 minutes longer or until bubbly. Let stand 10 minutes before serving. Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Bake casseroles as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

1 tablespoon butter
3 pounds whole russet potatoes
12 ounces thick cut bacon, cut into 1/2-inch pieces
2 large onions, thinly sliced
1 teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste
1 pinch cayenne pepper, or to taste
½ cup dry white wine
¾ cup creme fraiche
1 (16 ounce) round Reblochon cheese or other ripe, washed rind cheese

Steps:

  • Boil unpeeled potatoes with salt in water over high heat; reduce heat and simmer until potatoes are easily pierced with a knife but are not too soft, 15 to 25 minutes depending on size. Remove potatoes from water to cool.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook bacon in a skillet over medium to medium-high heat until cooked but not quite crisp and most of the fat is rendered out, 5 to 7 minutes. Push bacon to one side of the pan and blot up some of the fat with a wadded paper towel. Add onion slices. Season with kosher salt and freshly ground black pepper and cayenne. Cook and stir over medium heat until onions are soft, sweet, and golden, about 6 minutes. Add white wine; cook for 2 minutes and deglaze pan. Remove from heat.
  • Cut wheel of cheese into 2 semi-circles. Place each half cut side down and split in half to form 2 more semi-circles, each with a rind side and creamy cheese side.
  • When potatoes are cool enough to handle, peel off the skin. Slice into fairly thick slices, about 1/3 inch thick.
  • Place a little over half the potato slices onto bottom of a 2-quart shallow baking dish. A little overlapping is fine. Sprinkle with a bit of salt. Pour in bacon/onion/wine mixture and spread over potatoes in an even layer. Arrange the remaining potato slices over the top, overlapping as needed. Spread creme fraiche over the potatoes. Place down cheese pieces, rind side up. Transfer pan to a baking sheet. Bake in center rack of preheated oven until browned and potatoes are tender, 45 to 50 minutes.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

20 ounces diced potatoes, with onion, refrigerated, Simply Potatoes
1 teaspoon butter
1 teaspoon seasoning salt
1 teaspoon black pepper
12 eggs, lightly beaten
8 ounces shredded mild cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a medium baking dish.
  • Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
  • Remove sausage to a separate plate.
  • Add the butter to the same skillet and replace over medium heat.
  • Add the package of diced potatoes.
  • Cook and stir until lightly browned and slightly crispy on the outside.

1/2 teaspoon salt

1/4 cup dry bread crumbs

Steps:

  • In a large saucepan, melt 4 tablespoons butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. 1 (15 ounce) carton ricotta cheese
1 cup grated romano cheese or 1 cup parmesan cheese
1 cup sour cream
2 green onions, finely chopped (can use more)
3 tablespoons chopped fresh parsley
1 teaspoon dried basil
1 tablespoon minced fresh garlic (or to taste)

1 1/2 cups swiss cheese, shredded and divided
1 cup shredded cheddar cheese (or to taste)

  • Preheat oven to 350 degrees F.

3 1/3 cups instant potato flakes

  • Combine water, salt, butter, garlic powder and parsley flakes and heat to a boil.

2 -3 tablespoons butter
3/4 cup sour cream (light is okay)

1 (300 g) package frozen spinach, thawed and squeezed dry or 1 (10 ounce) package fresh spinach
2 cups crumbled feta cheese, to taste
2 -3 cloves fresh minced garlic, to taste
1/2 cup grated parmesan cheese

Steps:

  • Cook the poatoes in boiling water until very tender.
  • Mash with a potato masher or a fork.
  • In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
  • Set the oven to 350 degrees.
  • Butter a 10 cup casserole dish.
  • Wash the fresh spinach leaves (if using fresh spinach).
  • Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
  • Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
  • Stir the spinach mixture into the potatoes.
  • Spoon the mixture into the prepared baking dish (swirling the top slightly to design).
  • Sprinkle with the grated Parmesan cheese.

2 1/2 lbs baking potatoes, course chopped
1/4 cup butter
1/2 large white onion, chopped
1 large red bell pepper, chopped
3 celery ribs, chopped
3 garlic cloves, minced
1/2 cup butter
2 teaspoons tarragon vinegar
1/2 lemon, juice of
1 lb shrimp, 60 80 count
3/4 lb crabmeat
12 ounces cream cheese, softened
1 tablespoon sour cream
2 slices bacon, fried and chopped
1/3 cup parmesan cheese, grated
10 ounces cheddar cheese, grated
4 green onion tops, chopped
1/2 teaspoon cayenne pepper
salt
pepper
cajun seasoning (I use Emeril's Essence home made with no salt)

Steps:

  • Cook bacon until crisp, chop and set aside.
  • Preheat oven to 375°F.
  • Cut Potatoes into bite size pieces or about .5 ounces each.
  • Place in a large casserole dish, season with salt, pepper and Cajun seasoning.
  • Pour ½ stick of melted butter over potatoes and mix to coat.
  • Bake for 50 minutes or until the potatoes are fork tender and beginning to brown.
  • When the potatoes are almost done, Use a large deep skillet and add 1 stick butter, the onions, bell pepper and celery.
  • Simmer for about 8 minutes until onions begin to clear.
  • Add the garlic, simmer 1 minute.
  • Add the lemon juice, tarragon vinegar and the shrimp.
  • Season with salt, pepper and Essence or cayenne.
  • Cook shrimp until just done, about three minutes.
  • Add the cream cheese and sour cream, when it has liquefied add the crab meat, and stir gently to mix well.
  • When the mixture is hot, pour it over the top of the potatoes in the casserole dish and smooth it out.
  • Sprinkle the top with the parmesan, the chopped bacon, and spread the cheddar cheese out evenly on top.
  • Bake until the cheese has melted and serve immediately garnished with chopped green onions and a few dashes of Essence.

2 teaspoons salt
1 1/2 teaspoons dried basil
1 1/2 teaspoons caraway seeds
1 1/2 teaspoons paprika
3/4-1 1/2 teaspoon ground dried hot chili peppers (your choice)
1 1/2 teaspoons dried thyme
1/2-1 teaspoon cayenne (or lessto taste)
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon black pepper
1/2 teaspoon white pepper
4 large artichokes (you may substitute 2 cans artichoke hearts,saving the juice)
2 large potatoes
4 tablespoons unsalted butter
1 1/2 cups chopped onions
1 tablespoon minced fresh ginger
2 tablespoons finely diced fresh serrano chili peppers (or whatever chile pepper you like)
1/4 cup tamari soy sauce
2 cups heavy cream
4 ounces grated mozzarella cheese
8 ounces grated cheddar cheese

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Place a large pot half filled with water over high heat.
  • Add the artichokes and bring to a boil.
  • Reduce the heat to low, cover, and simmer just until the artichokes are tender, about 25 minutes.
  • Remove the artichokes from the pot, reserving the cooking water, and allow them to cool.
  • The best way to do this is to turn them upside down on your drainboard-all the excess water will drain out and they'll cool quickly.
  • Boil the potatoes in the water in which the artichokes were cooked just until they're tender, about 35 to 40 minutes, reserving 1 cup of the water (or if most of the cooking water has evaporated, add enough water to measure 1 cup).
  • Peel the potatoes and dice enough into 1/2 inch cubes to measure 1 cup firmly packed: slice the remainder into 1/2 inch thick rounds.
  • Set aside.
  • You may be tempted to eat all the artichokes yourself right now, but resist!
  • Inside every leaf there's a small amount of pulp-the good part.
  • To get it out, with your thumb on the back of a teaspoon, scrape the pulp off the inside of the leaf, always scraping away from yourself.
  • Reserve the pulp and discard the leaves.
  • Scrape out and discard the choke, the fuzzy section underneath all the little leaves, and be sure to get it all.
  • Peel the stems and dice the hearts and stems into bite-sized pieces.
  • Arrange the artichoke stems, hearts, and pulp and the potato slices in a 9x13 inch casserole, alternating layers of potato and artichoke.
  • Set aside.
  • Preheat the oven to 350*F.
  • Melt the butter in a 3-quart pot over high heat.
  • When the butter sizzles, add the onions, ginger, serrano peppers, and seasoning mix.
  • Stir and cook, and when the onions begin to brown, about 6 minutes, add the diced potatoes.
  • Reduce the heat to medium if necessary to prevent burning.
  • Cook, stirring and mashing the potatoes constantly, until the mixture becomes thick, fairly dry, and brown, about 4 minutes.
  • Add the reserved cooking water and cook, continuing to stir, for 6 minutes.
  • Add the tamari and cook for 5 minutes, stirring vigorously and mashing the potatoes until they disintegrate.
  • The mixture should be a rich brown color.
  • Stir in the heavy cream, bring to a boil, then add the mozzarella cheese.
  • Stir and remove from the heat.
  • Pour this sauce over the artichokes and potatoes in the casserole and top with the Cheddar cheese.
  • Bake until the cheese is a beautiful golden brown, about 25 minutes.
  • Serve hot.

We used bacon as our meat of choice in this recipe and it made for a wonderfully complete meal! All the yummy flavors of a traditional breakfast in one easy dish... woohoo!

6-8 medium potatoes
8 eggs
2 Tbsp water
3 c sharp cheese, grated
salt and pepper to taste
1/2 c finely diced onion
1 c cooked diced ham, browned sausage or cooked and drained bacon pieces

Steps:

  • 1. Cook potatoes and cool in the refrigerator. (Can be done the night before.)
  • 2. Peel, then grate potatoes (or rice in ricer).
  • 3. Mix eggs, water, salt and pepper together.
  • 4. Put potatoes and onion, evenly over bottom of a greased casserole. (You can mix them together if you'd like.)
  • 5. Layer or mix in ham or whatever meat you are using.
  • 6. Pour beaten egg mixture over potatoes.
  • 7. Spread cheese over top.
  • 8. Cover with foil and bake at 350 degrees for 30 minutes.
  • 9. Remove foil and bake an additional 15 minutes until golden brown.
  • 10. Let set 10 minutes after baking before cutting and serving.

As time goes by, I'll edit the recipe to correct some of the errors that are almost certainly here. 1/4 cup vegetable oil
7 -8 potatoes, grated and squeezed of excess liquid
12 eggs
1/4 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
16 ounces colby-monterey jack cheese (tasty possibilities) or 16 ounces mozzarella cheese (tasty possibilities)
sliced black olives (optional)
bacon (crumbled) (optional)
diced ham (optional)
sliced smoked sausage (optional)
bulk pork sausage (optional)
bell pepper (optional)
sliced mushrooms (optional)
white onions, optional (optional) or red onion (optional)

Steps:

  • Heat the vegetable oil in a large skillet at medium-high heat.
  • Add the potatoes and use your spatula to make sure the potatoes are fairly evenly coated with oil.
  • Lightly grease a 13 X 9 baking pan.
  • Let the potatoes cook about 5-7 minutes. Check the bottom. If the bottom of the potatoes is brown, turn the potatoes. Leave the potatoes to cook another 5-7 minutes, and then recheck them. Make sure you keep the turning to a minimum.
  • Beat the 12 eggs in a large bowl. Add the milk, salt, and pepper and beat together.
  • When the potatoes have been thoroughly cooked, remove them from the pan and arrange them evenly on the bottom of the 13 X 9 baking pan.
  • Pour the egg mixture over the top.
  • Add any of the optional ingredients.
  • Cover with the cheese.
  • Bake at 350 degrees F for 40 minutes or until a knife inserted in the center comes out clean.

12 ounces lean ground beef
1/2 cup chopped onion
11 ounces condensed nacho cheese soup
4 ounces diced green chili peppers
1/2 cup milk
1 (20 ounce) package refrigerated sliced potatoes
sour cream (optional)
salsa (optional)
sliced green onion (optional)
nonstick cooking spray

Steps:

  • Cook ground beef on top of stove or microwave; drain off fat.
  • In a medium mixing bowl, combine soup, undrained chile peppers and milk; blend well.
  • Lightly spray slow cooker with nonstick cooking spray.
  • Layer half of potatoes, cooked ground beef and soup mixture.
  • Repeat process.
  • Cook on low for 4 hours or on High for 2 1/2 hours or until potatoes are done.
  • Gently stir before serving.
  • Top with sour cream, salsa and/or sliced green onions.
  • If you are unable to find Nacho cheese soup, you can add melted Mexican cheese to regular cheese soup, use a Nacho cheese sauce or just use melted Mexican Velveeta cheese.

10 medium potatoes, peeled and cut into 1- to 1 1/2-inch pieces (8 cups)
3/4 cup milk
1/2 cup sour cream
2 tablespoons margarine or butter, softened
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon salt
1 cup shredded Havarti cheese (4 ounces)
1/2 cup shredded sharp Cheddar cheese (2 ounces)
1 tablespoon chopped fresh parsley

Steps:

  • Heat oven to 350°F. Grease 1 1/2-quart casserole. Place potatoes in 4-quart Dutch oven; add enough water (salted if desired) to cover. Cover and heat to boiling; reduce heat. Simmer about 10 minutes or until potatoes are tender; drain. Shake potatoes in Dutch oven over low heat to dry.
  • In large bowl, mash potatoes until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
  • Add sour cream, margarine, rosemary and salt. Beat vigorously until potatoes are light and fluffy. Stir in Havarti cheese. Spoon into casserole. Sprinkle with Cheddar cheese.
  • Bake uncovered 30 to 35 minutes or until hot. Sprinkle with parsley.

1/2 cup sour cream

1 lb ham slices, cut into bite-size pieces

2 lbs baking potatoes, of uniform size
1 tablespoon unsalted butter
salt
1 cup Fontina cheese, shredded
2/3 cup parmesan cheese, grated
1 cup light meat stock

Steps:

  • Have ready a large bowl of water. Peel the potatoes and slice them into thin rounds. As soon as they are skiced, place them in the water. When they have all bveen sliced, drain well and lay out on a kitchen towel to dry.
  • Preheat an oven to 300°F Grease a baking dish about 9 1/2 inches in diameter with the butter. In the prepared dish, layer some of the potato slices in a circle, with the slices slightly overlapping, to form a flower,.
  • Sprinkle with a pinch of salt and a small handful of each of the cheeses. Repeat the layering until yo have used up all the potatoes, finishing with the cheeses. Pour the meat stock over the surface.
