VELVEETA POTATO SOUP
I know what you're thinking....another potato soup...that's what I thought too until I tasted it. This is good served with "Jiffy" cornbread muffins, especially on cool autumn nights or cold winter nights. Positively a comfort food. This recipe is from a lady that I worked with at school.

Tips:
- Use a good quality cheese: The type of cheese you use will make a big difference in the flavor of your soup. Use a sharp cheddar cheese for a bold flavor, or a mild cheddar cheese for a more subtle flavor. You can also use a combination of cheeses, such as cheddar and Gruyère, for a more complex flavor.
- Don't overcook the potatoes: The potatoes should be cooked until they are tender, but not mushy. If you overcook them, they will lose their shape and the soup will be too thick.
- Use a blender or food processor to puree the soup: This will create a smooth and creamy texture. If you don't have a blender or food processor, you can mash the potatoes and cheese together with a potato masher.
- Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of cayenne pepper for a little heat.
- Serve the soup hot: Potato cheese soup is best served hot. You can garnish it with shredded cheese, chopped green onions, or bacon bits.
Conclusion:
Potato cheese soup is a classic comfort food that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple ingredients, you can create a delicious and satisfying soup that the whole family will enjoy.
