SAUSAGE, POTATO, AND SPINACH SOUP

Sausage, Potato, and Spinach Soup image

Wow. I normally make zuppa toscana, and this is similar but better. I did add more spinach than it called for (personal preference), but I'll post as listed. The only thing I would have done differently is double the recipe. Recipe courtesy of damndelicious.net.

PUREED SPINACH-POTATO SOUP

Pureed Spinach-Potato Soup image

Serve this silky-smooth soup as a starter, or pair it with crusty bread for a light meal.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 25m

Number Of Ingredients 8

2 tablespoons unsalted butter
1 onion, cut into 1/2-inch pieces
3 garlic cloves, minced
1 1/2 pounds (about 5 small) Yukon gold potatoes, peeled and cut into 1/2-inch pieces
1/4 cup dry sherry or white wine
2 cans (each 15 1/2 ounces) chicken broth
2 bunches (about 1/4 pounds) spinach, tough stems removed, leaves rinsed well and dried
Coarse salt and freshly ground pepper

Steps:

  • Melt butter in a large saucepan over medium heat. Add onion, garlic, and potatoes; stir to coat. Cook, stirring, 2 minutes.
  • Pour sherry, chicken broth, and 2 cups water into pan; stir to combine. Bring to a boil. Reduce heat to medium-low; cover, and simmer until potatoes are very tender, about 15 minutes.
  • Stir spinach into pan, and cook until wilted and bright green, about 3 minutes. Remove from heat. Puree soup with an immersion blender until smooth. (Alternatively, use a regular blender, working in batches so as not to fill jar more than halfway. Return mixture to saucepan.) Season with salt and pepper, and serve.

Tips:

  • Choose the right potatoes: Starchy potatoes like russet or Yukon Gold work best for a thick and creamy soup. Waxy potatoes like red or fingerling potatoes will hold their shape better if you prefer a soup with more texture.
  • Don't overcrowd the pot: When sautéing the vegetables, work in batches if necessary to avoid overcrowding the pot. This will help them cook evenly and prevent them from steaming instead of browning.
  • Use fresh spinach: Fresh spinach has the best flavor and texture for this soup. If you're using frozen spinach, be sure to thaw and squeeze out all the excess water before adding it to the soup.
  • Season to taste: Taste the soup as you go and adjust the seasonings as needed. You may need to add more salt, pepper, or garlic powder to suit your taste.
  • Serve with your favorite toppings: This soup is delicious on its own, but you can also serve it with a variety of toppings to add extra flavor and texture. Some popular options include croutons, grated Parmesan cheese, chopped bacon, or a dollop of sour cream.

Conclusion:

Potato spinach and tomato soup is a classic comfort food that is easy to make and loved by people of all ages. With its creamy texture, savory flavor, and colorful appearance, this soup is sure to be a hit at your next gathering. So next time you're looking for a quick and easy meal that is both delicious and nutritious, give this potato spinach and tomato soup a try. You won't be disappointed!
