GRILLED POTATO WEDGES

Grilled Potato Wedges image

We just started cooking with a 30-inch gas grill after decades of using a Weber® charcoal grill. While we still use the charcoal grill, the extra space allotted to us on the gas grill has made us really branch out with different sides. I created this one knowing we could put the potatoes directly on the grill and not have to make a foil packet to make it fit!

Number Of Ingredients 4

5 large russet potatoes, scrubbed and cut lengthwise into 1 1/2-inch wedges
Coarse salt
Extra-virgin olive oil, for brushing
Sea salt and freshly ground pepper

Steps:

  • Place potatoes in a large pot, and add enough cold water to cover by 2 inches. Generously season water with coarse salt. Bring to a boil, reduce heat, and simmer until a paring knife pierces through potatoes with some resistance, about 5 minutes. Drain in a colander, and pat potatoes dry with a kitchen towel.
  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for 4 to 5 seconds.) Season with sea salt and pepper, and serve.

Tips:

  • Choose the Right Potatoes: Opt for firm, starchy varieties like russet, Yukon Gold, or red potatoes. These hold their shape well and become crispy on the outside while staying tender on the inside.
  • Cut Evenly: Ensure your potato wedges are uniform in size and thickness to ensure even cooking. Aim for wedges about 1-inch thick and 3-4 inches long.
  • Season Generously: Don't be shy with the seasonings! Coat the potato wedges liberally with your favorite spices, herbs, and a generous drizzle of olive oil. This enhances their flavor and creates a crispy crust.
  • Don't Overcrowd the Grill: Avoid overcrowding the grill grate as this can prevent even cooking and steaming instead of roasting. Leave some space between the wedges to allow for proper air circulation and crispy results.
  • Flip at the Right Time: Keep an eye on the potato wedges and flip them once they have nice grill marks and a golden-brown color on one side. This ensures even cooking and prevents burning.

Conclusion:

Potato wedges on a pellet grill are a delightful side dish that combines crispy exteriors with fluffy interiors. By following these tips and the detailed recipe steps, you can achieve perfectly cooked potato wedges that are sure to impress your family and friends. Experiment with different seasonings and toppings to create unique flavor combinations that suit your taste buds. So fire up your pellet grill and enjoy this delicious and versatile dish anytime.
