Whenever we go camping, cheesy potato packets are a must. They just may remind you of scalloped potatoes. In the winter, I bake them in the oven. -Denise Wheeler, Newaygo, Michigan

TIN FOIL RED POTATOES AND ONIONS
My uncle uses a tin foil pouch and fills it with potatoes, onions, and adobo seasoning...then he cooks it on the grill. I used the tin foil part of his recipe and used an oven and different seasoning instead. Please be careful when opening up the tin foil when it comes out of the oven. Steam shoots out!

STEAK AND POTATO FOIL PACKS
As a park ranger, I've cooked a lot of meals outdoors. I often assemble a steak and potato foil pack and toss it into my backpack with some ice. Then when I set up camp, it's easy to cook over a campfire. If I'm at home, I use my grill, and the food is just as good. -Ralph Jones, San Diego, California

Tips:
- Choose the right potatoes: Small to medium-sized potatoes, such as Yukon Gold or Red Bliss, are best for cooking in foil in the oven. They cook evenly and have a tender texture.
- Scrub the potatoes well: Before cooking, scrub the potatoes thoroughly with a vegetable brush to remove any dirt or debris. This will help them cook evenly and prevent the skins from becoming tough.
- Prick the potatoes with a fork: Use a fork to prick the potatoes all over. This will help the steam escape during cooking and prevent the potatoes from bursting.
- Rub the potatoes with oil: To help the potatoes brown and crisp, rub them with a little olive oil before wrapping them in foil.
- Season the potatoes: Before wrapping, season the potatoes with salt, pepper, and any other desired herbs or spices. This will help them develop flavor as they cook.
- Wrap the potatoes tightly: To prevent the potatoes from drying out, wrap them tightly in foil. Fold the edges of the foil up to create a sealed pouch.
- Cook the potatoes at a high temperature: Bake the potatoes at a high temperature, such as 425 degrees Fahrenheit, to help them cook quickly and evenly.
- Check the potatoes for doneness: After the recommended cooking time, insert a fork into a potato to check for doneness. The potato is done cooking when the fork easily pierces the center.
Conclusion:
Cooking potatoes in foil in the oven is a simple and delicious way to prepare this versatile vegetable. By following these tips, you can achieve perfectly cooked potatoes that are tender on the inside and crispy on the outside. Serve them as a side dish, main course, or snack. Enjoy!
