Potato, Onion, and Tomato Gratin image

From "Dinner Parties," by Jessica Strand. This sounds like it would be a great and impressive side dish. I haven't tried it yet but think when I do that I might add some seasonings - maybe Italian seasoning or Herbes de Provence.

Tips:

  • Choose the right potatoes: For this recipe, it's best to use a firm potato that will hold its shape when cooked, such as Yukon Gold or red potatoes.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Don't overcrowd the pan: If you overcrowd the pan, the potatoes will steam instead of fry and won't get crispy.
  • Use a non-stick pan: This will help prevent the potatoes from sticking.
  • Don't stir the potatoes too much: Stirring the potatoes too much will break them up and make them mushy.
  • Season the potatoes well: Season the potatoes with salt, pepper, and other herbs and spices to taste.
  • Serve hot: Potatoes are best served hot, so enjoy them as soon as they're cooked.

Conclusion:

This recipe is a great way to enjoy potatoes, onions, olives, and tomatoes. The potatoes are crispy on the outside and fluffy on the inside, the onions are sweet and caramelized, the olives add a salty and briny flavor, and the tomatoes add a touch of sweetness and acidity. This dish is perfect for a weeknight meal or a casual weekend lunch. It's also a great way to use up leftover potatoes.
