CHICKEN IN DILL MUSTARD SAUCE

Yield Makes 4 servings

Number Of Ingredients 10

1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
4 whole chicken legs (2 lb total)
3 tablespoons vegetable oil
3/4 cup chopped shallots (2 large)
1/2 cup dry white wine
1 cup low-sodium chicken broth
2 teaspoons whole-grain or coarse-grain mustard
1/4 cup chopped fresh dill

Steps:

  • Whisk together flour, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a pie plate or shallow bowl. Pat chicken dry, then dredge legs, 1 at a time, in flour, shaking off excess. Transfer to a sheet of wax paper, arranging chicken in 1 layer.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken, skin sides down first, turning over once, 6 to 8 minutes total. Transfer chicken to a plate, then pour off all but 1 tablespoon fat from skillet.
  • Add shallots to skillet and sauté, stirring occasionally, until golden brown, 2 to 3 minutes. Add wine and deglaze skillet by boiling, stirring and scraping up brown bits. Add broth, mustard, and remaining 1/4 teaspoon salt and pepper. Bring to a simmer, then return chicken to skillet, skin sides up, along with any juices from plate, and cook over moderate heat, covered, until chicken is cooked through, about 25 minutes. Transfer chicken to a platter and boil sauce until reduced to about 1 cup and slightly thickened, 3 to 5 minutes. Remove from heat and stir in dill, then pour sauce over chicken.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling during the cooking process.
  • Use Quality Ingredients: The better the quality of your ingredients, the better your dish will taste. So, use fresh, high-quality chicken, fresh herbs, and flavorful mustard.
  • Don't Overcrowd the Skillet: When you're searing the chicken, make sure you don't overcrowd the skillet. This will prevent the chicken from cooking evenly.
  • Cook the Chicken Thoroughly: Make sure you cook the chicken all the way through before serving. The internal temperature of the chicken should reach 165°F (74°C).
  • Let the Chicken Rest: After you've cooked the chicken, let it rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

This Mustard-Dill Chicken Skillet is a quick, easy, and delicious meal that's perfect for a busy weeknight. The chicken is tender and juicy, the sauce is flavorful and creamy, and the whole dish comes together in just 30 minutes. So, next time you're looking for a simple and satisfying chicken dinner, give this recipe a try. You won't be disappointed!
