Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 17

1 cup butter, softened
1 1/2 cups granulated sugar
1 cup light brown sugar, firmly packed
4 large eggs
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
2 teaspoons vanilla extract
3/4 cup butter
1 cup granulated sugar
1/2 cup light brown sugar, firmly packed
4 large egg yolks
1 (12 ounce) can evaporated milk
2 teaspoons vanilla extract
2 cups pecans, chopped

Steps:

  • Grease and flour three nine-inch round cake pans and preheat oven to 350 degrees.
  • Cream the butter with both granulated sugar and light brown sugar until very light and fluffy, then add the eggs, one at a time, beating well after each addition.
  • Sift the flour with the baking powder, baking soda and salt and add to the batter alternately with the milk, beginning and ending with the dry mixture. Stir in the vanilla extract.
  • Divide batter evenly among the prepared pans and bake in the center of the preheated oven for 25 to 30 minutes or until a wooden pick inserted in the center of the layers comes out clean. Cool layers in their pans over a rack for ten minutes, then loosen and turn out layers directly onto racks for cooling. Cool layers thoroughly before icing.
  • For the icing, melt the butter in a large saucepan over medium heat. Remove from heat, then stir in granulated sugar and light brown sugar. (Sugars will not dissolve).
  • In a separate bowl, whisk the egg yolks with the evaporated milk until smooth, then whisk this mixture into the saucepan with the sugar mixture. Return saucepan to a medium heat setting and cook, whisking constantly, until mixture is thick, shiny and caramel-like, about 15 to 20 minutes. Remove from heat and stir in vanilla extract and pecans.
  • Cool icing to a good spreading consistency (about 30 minutes), then spread evenly between cooled cake layers and over the top and sides of the cake.

APPLE PECAN UPSIDE DOWN CAKE

Apple Pecan Upside Down Cake image

A twist on Pineapple version. Edited directions since Bayhill's review and question about baking powder vs. baking soda! :)

Provided by Outta Here

Categories     Dessert

Time 1h55m

Yield 8 serving(s)

Number Of Ingredients 14

1/4 cup pecans, chopped
1/4 cup butter
1 cup light brown sugar, packed
2 granny smith apples
1 cup flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons butter, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
6 tablespoons milk
whipped topping (optional)

Steps:

  • Peel, core and slice apples about 1/4 inch thick. Place in a mixture of water and lemon juice to prevent browning. Set aside.
  • Preheat oven to 450°F.
  • Toast pecans on ungreased baking sheet in oven until lightly browned, about 10 minutes. Check frequently to prevent burning.
  • Reduce oven temperature to 325°F.
  • Melt butter in small, heavy saucepan. Add brown sugar and cook, stirring, just until melted, 3 to 5 minutes. Watch closely because sugar burns easily.
  • Pour butter-sugar mixture into 9 inch round nonstick cake pan and spread to coat bottom. Sprinkle chopped pecans on top butter-sugar mixture. Drain and pat dry apples and place in circles, slightly overlapping, over pecans.
  • Sift flour, baking powder, cinnamon and salt into bowl. Using electric mixer, beat butter at medium speed until light and fluffy. Add sugar and continue beating until creamy, 3 to 5 minutes. Add egg and vanilla and continue beating until completely incorporated.
  • Reduce speed to low, add flour mixture and milk, alternating, in 3 additions. Continue to mix only until dry ingredients are completely mixed in, stopping to scrape sides if necessary.
  • Spoon batter over topping and spread carefully so batter is even.
  • Bake 55 minutes, or until tester comes out clean. Cool in pan 10 to 15 minutes. Carefully run spatula around edge of pan and let stand another 10 to 15 minutes.
  • Invert pan over large plate and let stand 3 minutes. Carefully remove pan.
  • Serve warm with fresh whipped cream.

UPSIDE-DOWN PECAN CAKE

Upside-Down Pecan Cake image

If you like, once you have zested the orange for the batter, you could cut the fruit into sections to serve alongside the moist and crunchy cake.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 1h10m

Number Of Ingredients 8

1 1/2 cups pecan halves (about 5 ounces)
1/2 cup (1 stick) plus 2 tablespoons unsalted butter, room temperature
1 cup plus 1 tablespoon sugar
1 cup all-purpose flour (spooned and leveled)
3 large eggs, room temperature
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon grated orange zest

Steps:

  • Preheat oven to 350 degrees. Spread pecans in a single layer on a baking sheet; toast until crisp, about 7 minutes. Let cool, then coarsely chop 1/2 cup pecans. Set remaining aside.
  • Place 2 tablespoons butter in a 9-inch round cake pan; heat in the oven until melted, about 3 minutes. Remove from oven; sprinkle 1 tablespoon sugar over butter. Scatter chopped nuts over sugar; set aside.
  • In a food processor, process reserved pecans and flour until nuts are very finely ground. Set aside. With an electric mixer, beat remaining 1/2 cup butter and remaining cup sugar until light and fluffy. Beat in eggs, one at a time, until combined.
  • In a small bowl, combine flour mixture, baking powder, and salt; fold into egg mixture. Stir in zest. Pour into prepared pan, smoothing top.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs, 35 to 40 minutes. Cool 10 minutes in pan; invert onto a rack to cool completely, bottom side up so the butter-pecan layer is on top.

Tips:

  • Use a heavy bottomed skillet to make the praline sauce. This will help prevent the sugar from burning.
  • Be careful not to overcook the praline sauce. It should be a light golden color and have a slightly thick consistency.
  • Use high-quality pecans for the best flavor. Toasting the pecans before using them will enhance their flavor even more.
  • Make sure the butter and sugar are creamed together until light and fluffy. This will help to create a tender and moist cake.
  • Don't overmix the batter. Overmixing can result in a tough cake.
  • Bake the cake until a toothpick inserted into the center comes out clean. Overbaking can dry out the cake.
  • Let the cake cool completely before inverting it onto a serving plate. This will help to prevent the cake from breaking.
  • Serve the cake with whipped cream, ice cream, or your favorite topping.

Conclusion:

This praline pecan upside-down cake is a delicious and easy-to-make dessert that is perfect for any occasion. With its rich praline sauce and crunchy pecans, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this praline pecan upside-down cake a try. You won't be disappointed!
