HEARTY MINESTRONE SOUP (INSTANT POT®)

Hearty Minestrone Soup (Instant Pot®) image

So I feel like I am using my Instant Pot® at least 4 times a week. I have been having a great time experimenting and am amazed at the way the flavors are locked in and how quickly the meals are finished... not to say the super easy clean up. The main insert can go in the dishwasher and I hand-clean the top with very sudsy water.

Slow Cooker Beef Minestrone Soup image

Yield 8

Number Of Ingredients 18

1 pound ground beef
1 (14.5 ounce) can diced tomatoes (do not drain)
2 cups carrots (chopped)
2 cups potatoes (chopped)
1 1/2 cups celery (chopped)
1 yellow onion (diced)
3 teaspoons minced garlic
1 Tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
4 cups beef stock
2 cups water
3 cups tomato juice
1 (15 ounce) can red kidney beans (drained and rinsed)
1 (15 ounce) can cannellini beans (drained and rinsed)
1 1/2 cups zucchini (diced)
1 cup ditalini pasta (uncooked)
1 (15 ounce) can green beans (drained)

Steps:

  • In a medium skillet, brown ground beef until completely cooked.
  • Place your ground beef, diced tomatoes, carrots, potatoes, celery, onion, garlic, Italian seasoning, salt and pepper into your slow cooker.
  • Add in beef stock, water, and tomato juice.
  • Cover and cook on low heat 6-8 hours or high 3-4 hours.
  • After cooking time is up, add in red kidney beans, cannellini beans, zucchini, pasta, and green beans. Cook on high heat for an additional 15 minutes or until pasta is tender.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your minestrone soup taste its best. Use ripe vegetables, flavorful broth, and high-quality beef.
  • Don't overcrowd the pot: If you overcrowd the pot, the vegetables won't cook evenly and the soup will be watery. Add the vegetables in batches if necessary.
  • Cook the soup until the vegetables are tender: The vegetables should be tender but still have a little bit of bite to them. Overcooked vegetables will become mushy and lose their flavor.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of lemon juice or red wine vinegar for a bit of brightness.
  • Serve the soup with your favorite toppings: Some popular toppings for minestrone soup include grated Parmesan cheese, crusty bread, and a dollop of pesto.

Conclusion:

Pressure cooker minestrone soup with beef is a hearty, flavorful soup that is perfect for a cold winter day. It is also a great way to use up leftover vegetables. With its combination of fresh vegetables, flavorful broth, and tender beef, this soup is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this pressure cooker minestrone soup a try.
