PROSCIUTTO SPIRALS WITH BALSAMIC GLAZE

Prosciutto Spirals With Balsamic Glaze image

From the Pampered Chef cookbook Easy and Impressive Appetizers. This appetizer can be made the day before and garnished with glaze when serving. Shortcuts for Canadian cooks: shop at Superstore/Loblaws for President's Choice Glaze with Balsamic Vinegar and Artichoke & Asiago Tapenade to replace the cream cheese and artichoke mixture.

Categories     Pork

Time 40m

Yield 48 spirals

Number Of Ingredients 7

3/4 cup balsamic vinegar
4 ounces cream cheese, softened (light, spreadable works well)
1 (14 ounce) can water-packed artichoke hearts, drained & coarsely chopped
2 tablespoons red onions, finely chopped
2 tablespoons fresh basil, finely chopped
16 slices prosciutto (8 ounce package)
2 cups arugula

Steps:

  • Prepare glaze by simmering vinegar in a small saucepan over medium-high heat until reduced by half. Set aside. According to the recipe, this should take 7-9 minutes but I found it took quite a bit longer. Now I use the balsamic glaze mentioned in the description.
  • Prepare the filling by whisking (or beating with a mixer) the cream cheese until smooth. Add artichokes, onion and basil to cream cheese and mix well.
  • To assemble rolls, lay a sheet of plastic wrap on work surface. Arrange four slices of prosciutto vertically on plastic wrap, overlapping slightly to form a 9 inch square. Spread 1/3 cup of artichoke filling over prosciutto. Top with 1/2 cup of arugula (you could substitute romaine cut in thin strips).
  • Starting at the side closest to you, tightly roll up prosciutto and fillings like a jelly-roll or a sushi roll. Wrap up in the plastic wrap; refrigerate until ready to serve. Repeat 3 more times for a total of 4 rolls.
  • To serve, remove each roll from plastic wrap and slice into 12 spirals for a total of 48 rolls. Place on serving platter and drizzle with glaze.

Yield Serves 10 as a first-course

Number Of Ingredients 9

2 small red bell peppers
3 15-ounce cans garbanzo beans (chickpeas), drained, rinsed
10 canned artichoke hearts, drained, patted dry, quartered
20 large uncooked shrimp, peeled, deveined, tails left intact
5 paper-thin slices prosciutto, each slice cut lengthwise into 4 strips
10 radicchio leaves
Balsamic Dressing
Pickled hot or sweet cherry peppers, drained
Kalamata olives or other brine-cured black olives

Steps:

  • Char bell peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag. Let stand 10 minutes. Peel and seed peppers, then cut into matchstick-size strips. Transfer to large bowl. Add garbanzo beans and quartered artichoke hearts.
  • Bring large saucepan of salted water to boil. Remove from heat. Add shrimp. Let stand until just cooked through, stirring occasionally, about 5 minutes. Drain. Pat dry with paper towels. Transfer shrimp to small bowl. Chill until cold. Wrap each shrimp with 1 prosciutto strip. (Can be made 8 hours ahead. Cover garbanzo bean mixture and prosciutto-wrapped shrimp separately and refrigerate.)
  • Place radicchio leaves on plates. Toss garbanzo bean mixture with enough Balsamic Dressing to coat. Season to taste with salt and pepper. Spoon garbanzo bean mixture into radicchio leaves, dividing equally. Top with prosciutto-wrapped shrimp. Drizzle some dressing over shrimp. Garnish plates with pickled peppers and olives and serve.

PROSCIUTTO AND ROCKMELON (CANTALOUPE) WITH BALSAMIC GLAZE

Prosciutto and Rockmelon (Cantaloupe) With Balsamic Glaze image

From Australian BH&G Diabetic Living - a lovely refreshing summer dish. The recipe called for Rockmelon but food.com does not recognise and I think cantaloupe is the equivalent - rockmelon is an orange fleshed melon. There is no cooking time (unless you are making the glaze) but if not serving immediately keep chilled in the refrigerator.

Provided by ImPat

Categories     Melons

Time 21m

Yield 8 serving(s)

Number Of Ingredients 5

800 g cantaloupe (peeled and deseeded)
8 slices prosciutto (80grams thin)
1 tablespoon balsamic glaze (see note at end of recipe)
2 teaspoons extra virgin olive oil
ground black pepper (fresh)

Steps:

  • Using a slicer, mandolin or vegetable peeler, slice the peeled rockmelon/cantaloupe into long ribbons and cut each slice of prosciutto into 3 long strips.
  • Roll up the strips of rockmelon and arrange on plates and then roll up the strips of prociutto and place on the rockmelon.
  • Drizzle the balsamic glaze and oil on the plates around the melon and sprinkle with pepper to serve.
  • BALSAMIC GLAZE (reduced balsamic vinegar), if you cannot buy you can make it by putting 80ml (1/3 cup) balsamic vinegar in a small non-stick frypan and bring to a simmere over high heat and then reduce heat to medium-high and simmer for 3-5 minutes or until vinegar reduces and thickens and this will make 1 tablespoon of glaze and if it is too thick, jusst add a little more vinegar.

Tips:

  • To ensure consistently sized prosciutto spirals, use a sharp knife to thinly slice the prosciutto.
  • For a more flavorful filling, mix the cream cheese with herbs, spices, or minced vegetables.
  • To achieve a golden brown and crispy texture, brush the prosciutto spirals with melted butter before baking.
  • For a sweeter glaze, add a touch of honey or maple syrup to the balsamic vinegar.
  • Garnish the prosciutto spirals with fresh herbs, such as basil or thyme, for an extra layer of flavor and visual appeal.

Conclusion:

Prosciutto spirals with balsamic glaze are an elegant and delicious appetizer that is perfect for any occasion. With their combination of salty prosciutto, creamy filling, and tangy glaze, these spirals are sure to impress your guests. Whether you serve them as a standalone snack or as part of a larger spread, these prosciutto spirals are sure to be a hit.
