18 thin slices prosciutto
18 fresh basil leaves
18 extra-large shrimp, peeled, deveined
18 bamboo skewers, soaked in water 30 minutes
1/3 cup red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon chopped garlic
1 cup olive oil

Steps:

  • Place 1 prosciutto slice on work surface, short end parallel to edge. Place 1 basil leaf at 1 short end of prosciutto slice. Place 1 shrimp atop basil leaf. Roll up shrimp in prosciutto. Thread shrimp on skewer. Repeat with remaining prosciutto, basil, shrimp and skewers. (Can be prepared 1 day ahead. Wrap tightly in plastic and refrigerate.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Combine vinegar, mustard and garlic in blender. Gradually add oil; blend well. Transfer to small bowl. Season sauce with salt and pepper.

1/2 cup olive oil
2 tablespoons dry white wine vinegar
3 tablespoons chopped fresh basil
1 pound large shrimp (13 to 15 per pound), peeled and deveined, with tails intact
8 to 10 pieces prosciutto di Parma, sliced very thin

Steps:

  • Combine oil, vinegar, basil and garlic in a bowl. Add the shrimp and marinate overnight in the refrigerator. Preheat broiler.
  • Drain shrimp. Cut each piece of prosciutto in half, lengthwise and wrap around each shrimp, securing well with a toothpick.
  • Saute the shrimp in a non-stick pan, that has been heated and lightly brushed with olive oil. Cook only to seal the prosciutto to shrimp. Place each piece on broiler pan and grill under broiler for 2 minutes on each side. Careful not to burn the prosciutto or overcook the shrimp.

2 cups water
1 tablespoon butter
salt and pepper to taste
½ cup polenta
6 ounces mascarpone cheese
2 tablespoons olive oil
6 large shrimp - peeled and deveined
1 ½ cups finely chopped toasted hazelnuts
6 (1/2 ounce) slices prosciutto
2 fluid ounces hazelnut liqueur
⅔ cup heavy cream
4 green onions, with tops flared

Steps:

  • In a medium-size pot bring water to a boil. Add butter, salt, and pepper. Mix in dry polenta and let cook until thickened, approximately 8 minutes.
  • When the polenta has thickened, gently blend mascarpone cheese into it. Remove the pan from heat. Spread polenta-cheese mixture to a 2-inch thickness on an oil-coated surface. When cool, cut a disk using a drinking glass as a cutter. Saute polenta disks in olive oil, in a non-stick skillet. Set aside. (Can be prepared in advance).
  • Coat shrimp with hazelnuts and wrap each with a slice of ham. In a skillet, saute shrimp carefully in remaining olive oil. Remove shrimp from the pan and keep them warm.
  • Pour hazelnut liquor into another skillet (or the same skillet used to saute the shrimp, cleaned). When hazelnut flavored liquor is hot (but well under the boiling point), carefully flambe (by touching the edge of the pan with the flame of a match or taper). Be careful and stand back when cooking with open flame! When flames die down, add cream and remaining hazelnuts. Lower heat and continue cooking until mixture thickens.
  • To assemble, place a polenta disk in the center of a serving dish. Arrange shrimp around the plate. Drizzle sauce mixture on top. Garnish with green onions.

This recipe supposedly is similar to the recipe used at a restaurant in California. This was from my magazine clippings,Bon Appetit I believe. Update: This does make a lot of sauce,so you might want to cut that portion of the recipe in half and also have some slices of crusty bread to dip in the extras (which is delicious). Also, if your shrimp aren't huge, you may need to use 2-3 smaller shrimp per skewer to get a nicer balance between the meat and basil.

1/3 cup red wine vinegar

  • You will also need 18 bamboo skewers for this recipe- soak them in water 30 minutes before using.
  • Set a slice of proscuitto on a work surface and place a basil leaf at one of the short ends, then top with a shrimp and roll up jelly roll style.
  • Stick the shrimp on a skewer, leaving a handle, and continue with the rest of the shrimp- one shrimp roll per skewer.
  • Heat a grill to medium-high (or preheat your broiler) and coat grill with a bit of oil so the shrimp won't stick.

12 slice prosciutto, sliced paper thin
12 large shrimp, peeled ,deveined, cooked
12 slice melon, sliced thin
12 tsp cream cheese
1 c mango, diced
1/2 c papaya, diced
2 medium jalepenos, diced
2 Tbsp fresh cilantro, diced
1/2 c sweet red peppers, diced
6 Tbsp lime juice, divided
1/2 c red onion, diced

Steps:

  • 1. Marinate the shrimp in 3 tablespoons of lime juice while you make the tropical mango salsa.
  • 2. In a bowl combine the mango, papaya, jalepenos, onions,cilantro, red peppers, and lime juice
  • 3. Take one slice of prosciutto, place a slice of melon in the middle, put a shrimp on top of that, put a teaspoon of cream cheese on top of shrimp.
  • 4. Wrap each end of prosciutto over filling, cover and refridgerate until ready to serve.
  • 5. Serve the prosciutto wrapped shrimp with the mango salsa.

2 Tbsp fresh ginger, minced
2 clove garlic, minced
2 tsp fresh rosemary, minced
2 tsp fresh lemon thyme, minced

1/2 tsp ground black pepper
24 medium shrimp, peeled and deveined
12 slice (thin) prosciutto ham, cut in half lengthwise

1/4 c butter, melted
PAPAYA-TOMATO RELISH
1 medium papaya, cleaned and diced
1/3 c (1 medium) ripe red tomato, cleaned and diced
1/4 c chopped parsley
1/4 c chopped chives
1/4 c chopped sweet gherkins
1/4 c diced red bell peppers
3 Tbsp small capers
1/4 c rice wine vinegar
1 large garlic clove, minced
1/3 c extra virgin olive oil
salt & pepper to taste

Steps:

  • 1. In large mixing bowl, combine the oil, ginger, garlic, rosemary, thyme, vodka and pepper. Add the shrimp, toss to coat with marinade. Cover and refrigerate for 3 hours.
  • 2. Preheat the oven to 350ºF. Remove shrimp from marinade and wrap each in prosciutto. Butter and layer 3 sheets of phyllo per shrimp. Cut widthwise into 1-inch wide strips. Wrap phyllo around the shrimp to form the natural shape of the shrimp. Brush the outside with butter and refrigerate for 1 hour. Place the phyllo-wrapped shrimp on an ungreased cookie sheet and bake for 8 to 10 minutes or until golden brown.
  • 3. Serve hot with Papaya-Tomato Relish or your favorite Southwestern style relish.
  • 4. PAPAYA-TOMATO RELISH: In a medium bowl, combine the papaya, tomato, parsley, chives, gherkins, red peppers and capers. In a small bowl, combine the vinegar and garlic. Whisk in the olive oil and blend well. Pour over papaya mixture, toss and add salt and pepper to taste.

1 tablespoon chopped fresh basil
1 teaspoon extra-virgin olive oil
1/2 teaspoon lemon zest
1/2 teaspoon kosher salt

10 very thin slices prosciutto (about 4 ounces total)

8 lemon wedges, for serving
