Provided by Jeff Mauro, host of Sandwich King

Categories     appetizer

Time 40m

Yield 24 pinwheels

Number Of Ingredients 8

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
  • Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
  • Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

ENGLISH PASTRY PINWHEELS WITH CHEESE AND ONION

English Pastry Pinwheels With Cheese and Onion image

These are excellent as an appetizer or for potlucks/ buffets. They are lovely straight from the oven but are also good cold. I include mashed potato to give them a creamy texture but they can be made with just cheese and onion as a filling.

Time 38m

Yield 15 pinwheels

Number Of Ingredients 5

1 half pound sheet puff pastry
1 cup onion, chopped
3/4 cup mashed potatoes
1 cup grated cheese
butter, for frying the onions, if required

Steps:

  • Fry the onions until soft and cooked.
  • Preheat the oven to 180 degrees C or 350 degrees F.
  • Lay out the puff pastry sheet.
  • Spread the mashed potato over the pastry, leaving a half inch gap at one end (if you have a rectangular sheet of pastry, leave the gap along one of the longer sides). This will allow the pastry to seal once rolled and stop the filling overflowing.
  • Spread the onions and cheese over the mashed potato, again leaving a gap.
  • Roll the pastry tightly towards the end with a gap in the filling.
  • Dampen with water the pastry where you have left a gap and use this part to seal the end to the roll.
  • Cut into 3/4 inch pinwheels and bake on a tray in the oven for 12-13 minutes, or until the pastry is cooked and the cheese golden.
  • Allow to cool slightly before removing from the tray.
  • Serve warm or at room temperature.

  • Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.

Tips:

  • Use high-quality puff pastry dough: This will make a big difference in the final product. Look for puff pastry dough that is made with real butter and has a high fat content (at least 80%).
  • Make sure the puff pastry dough is cold before you start working with it: This will help prevent the dough from becoming too sticky and difficult to work with. If the dough is too warm, it will be more likely to tear.
  • Roll the puff pastry dough out evenly: This will help ensure that the cheese pinwheels are all the same size and shape.
  • Don't overfill the cheese pinwheels: Too much cheese will make the pinwheels difficult to roll and seal.
  • Bake the cheese pinwheels until they are golden brown: This will ensure that they are cooked through and have a crispy exterior.
  • Serve the cheese pinwheels warm: They are best enjoyed fresh out of the oven.

Conclusion:

Cheese pinwheels are a delicious and easy-to-make appetizer or snack. They are perfect for parties, potlucks, or just a casual gathering with friends. With a few simple ingredients and a little bit of time, you can create a tasty treat that everyone will love. So next time you are looking for something to serve your guests, give cheese pinwheels a try.
