6 cups boiling water
½ cup vegetable shortening
2 medium onions, chopped
2 (1 inch) pieces cinnamon stick
4 whole cloves
1 teaspoon ground ginger

1 teaspoon garlic powder
10 cardamom seeds
4 ½ cups long-grain white rice
1 cup plain yogurt
2 teaspoons salt

Steps:

  • Place saffron threads into boiling water, set aside to steep.
  • Melt the vegetable shortening in a large pot over medium-high heat. Stir in the onions, and cook until golden, about 5 minutes. Season with cinnamon sticks, cloves, ginger, cumin, garlic powder, and cardamom seeds. Cook for 3 to 4 minutes to release the flavor, stirring constantly.

2 cups basmati rice (or long grain rice)
2 cups water
2 tablespoons butter (or ghee)
1 tablespoon cumin seed
1 tablespoon fresh ginger, grated
1 cup shelled green peas
1 cup potato, peeled and chopped fine
2 tablespoons powdered coriander seeds
1 teaspoon powdered garam masala
1 tablespoon salt
1 teaspoon turmeric
4 cups water

Steps:

  • Wash rice and soak in 2 cups of water for an hour. Drain well.
  • In a heavy pan, heat the butter and add the cumin and the ginger.
  • When the ginger becomes a light brown, add the peas and potatoes, coriander, garam masala, salt and turmeric. Stir-fry till well mixed.
  • Add the drained rice & 4 cups of water, bring to a boil uncovered, then lower the heat to simmer and cover. The rice should be done in 10 minutes.
  • Serve hot.

1 carrot (diced)
5 beans (diced)
1/4 cup green peas
1 bay leaf
3 cloves

2 green chilies, slit

2 tablespoons vegetable oil
1/4 cup raw whole cashews
1/4 cup golden raisins
1 teaspoon cumin seed
1/2 teaspoon black peppercorns
5 cardamom pods
6 whole cloves
2 bay leaves
2 three-inch cinnamon sticks
2 medium red onions, cut in half and thinly sliced
1 1/2 cups cold water
1/2 teaspoon saffron threads
1 teaspoon salt

Steps:

  • Place rice in medium bowl; add enough cold water to cover rice. Rub rice gently between fingers; drain. Repeat 4 or 5 times until water is clear; drain. Cover rice with cold water; soak 30 minutes. Drain; set aside.
  • Heat oil in 2-quart saucepan over medium-high heat. Add cashews; stir-fry 10 to 20 seconds or until cashews are golden brown. Remove with slotted spoon; drain on paper towels.
  • Add raisins to hot oil; stir-fry 20 to 30 seconds or until raisins plump up. Remove with slotted spoon; add to cashews to drain.

  • Add rice; gently stir-fry 1 minute, taking care not to break tender rice grains. Stir in 1 1/2 cups cold water, the saffron and salt. Heat to boiling, stirring once; reduce heat to medium-high. Cook uncovered 5 to 6 minutes, stirring occasionally, until almost all the water has evaporated.
  • Reduce heat to low. Cover and cook 5 minutes; remove from heat. Let rice stand covered 10 to 15 minutes.
  • Fluff rice with fork or spoon to release steam. Serve sprinkled with roasted cashews and raisins. Serve with peppercorns, cardamom pods, cloves, bay leaves and cinnamon sticks left in to continue to flavor the rice, but do not eat them.

3/4 cup peas, rinsed and drained
1 medium yellow onion, thinly sliced
4 cups chicken stock
3 cloves

1/2 teaspoon turmeric powder

Steps:

  • In a pot, heat up the oil on medium high heat.
  • Add the onion and cook till it softens, becomes translucent and releases its water. Do not brown or dry out.
  • Add cloves, bay leaf, cardamom, peppercorn and cumin.
  • Fry for about a minute or so.
  • Add turmeric powder, coriander powder and chilli powder. Stir and fry a bit. If it looks a little dry add a little bit of the chicken stock that you have aside.
  • Add the garlic and ginger paste, stir fry a minute or two.
  • Add the peas and chicken stock and let it warm up but not to a boil.
  • Add rice and salt to taste. Stir well. Increase heat to high. Let the rice come to a boil and let boil for 5 minutes.
  • Give a quick stir, cover with lid and turn heat down to medium and let cook for 15 minutes.
  • Turn the stove off. Do not uncover the rice or move it from the stove. Let it sit in its steam for 5-10 minutes as the stove cools down allowing the rice to become fluffy.
  • Serve hot!

1 onion (small, chopped)
1 teaspoon garam masala
1 teaspoon turmeric
1 garlic clove (chopped)

500 ml chicken stock or 500 ml vegetable stock

Steps:

  • Heat the oil and fry onion until softened.
  • Add all the other flavouring ingredients except rice, sultanas, and stock. Heat until becoming aromatic (don't burn them!).
