2 tablespoons of barbecue sauce
5 ounces of pulled pork, thinly sliced

Steps:

  • Preheat the oven to 400 degrees F/200 degrees C.

1 jalapeño (very thinly-sliced)

Extra-virgin olive oil, for brushing
1 pound refrigerated pizza dough
1 pork tenderloin (1 to 1 1/4 pounds), trimmed
Kosher salt and freshly ground pepper
1/3 cup teriyaki glaze
1/2 pineapple, peeled, cored and thinly sliced
1 red onion, sliced into thick rings
1 1/2 cups shredded whole-milk mozzarella cheese (about 6 ounces)
1/2 cup fresh cilantro

Steps:

  • Preheat a grill to medium high. Brush a baking sheet with olive oil. Place the pizza dough on the pan and turn to coat with the oil; set aside to bring to room temperature.
  • Slice the pork lengthwise down the center almost all the way through, then open like a book and flatten with your hands. Season the pork with salt and pepper and brush all over with 2 tablespoons teriyaki glaze. Brush the pineapple and onion slices with olive oil and season lightly with salt and pepper.
  • Brush the grill grates with olive oil. Arrange the pineapple and onion on one side of the grill and the pork on the other side. Grill the pineapple and onion until tender and lightly charred, 2 to 3 minutes per side; transfer to a plate. 1 cup leftover Hawaiian sauce from Hawaiian Pulled Pork Sandwiches recipe
1/2 (20-ounce) can pineapple chunks, leftover from sweet and sour chicken skewers
1/2 cup leftover Hawaiian Pulled Pork
1 cup shredded mozzarella cheese
1 medium yellow onion, thinly sliced
Salt and freshly ground black pepper
Cilantro, garnish
1 packet teriyaki marinade (recommended: McCormick Grill Mates)
1 tablespoon paprika
1 teaspoon fresh ground pepper
3 1/2 pounds pork shoulder
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chili sauce
1 (6-ounce) can pineapple juice
1 medium onion, chopped
2 carrots, chopped
8 hamburger rolls
2 tablespoon canola oil
1 tablespoon ginger, chopped
2 teaspoons garlic, chopped
1/2 cup apple cider vinegar
1/4 cup brown sugar
1/2 (20-ounce) can pineapple chunks, juice reserved
1 tablespoon cornstarch, mixed with 1 tablespoon water
1 red pepper, cut into 1-inch pieces
1 lb boneless skinless chicken boneless thighs about four thighs
Kosher salt and freshly ground black pepper
8 bamboo skewers, soaked in water for 30 minutes

Steps:

  • Preheat oven to 450 degrees F.
  • Lightly oil a medium sized baking sheet. Roll or stretch dough to fit into oiled pan.
  • Place in oven and bake for 8 minutes.
  • Remove from oven and evenly coat with the Hawaiian Sauce leaving a 1 inch border from the edge of the dough. Top with leftover pulled pork, pineapple chunks and sprinkle with cheese.   • In small bowl, combine teriyaki mix, paprika and pepper.
  • Coat the pork the with rub mixture, patting until all rub is used. Set aside.
  • In a bowl whisk together the chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice. Set aside.
  • Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder for Hawaiian sauce. Cover and cook on low for 7 to 8 hours. The meat should fall apart easily. Remove the roast from the slow cooker to a cutting board. Using 2 forks carefully pull the meat into shreds. Serve the pork on rolls drizzled with the Hawaiian sauce or on the side for dipping. Reserve the remaining pulled pork for the Round 2 Recipes, Pulled Pork Pot Stickers and Hawaiian Pizza.
  • In a medium pot heat the oil over medium heat. Add garlic and ginger and saute until soft, about 2 minutes. Add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside..
  • Put the vinegar, sugar, reserved pineapple juice and cornstarch slurry into a small saucepan. Bring to a boil over medium heat, then reduce heat and simmer until the sauce thickens, about 8 minutes. Remove from heat and set aside. Reserve half of the sauce in a small serving bowl to be used as a dipping sauce alongside the skewers.
  • Quarter the red pepper and remove the core and seeds. Slice each quarter into 6 pieces. Cut each chicken thigh into 6 pieces.
  • Preheat a grill pan or an outdoor grill to medium heat.
  • On each of the 8 skewers, place 1 chunk of pineapple, then a piece of chicken thigh, followed by a piece of red pepper. Repeat with another piece of pineapple then chicken, then red pepper. Season skewers with salt and pepper, to taste. Grill the skewers on oiled grill, cooking for 4 minutes on each side. Brush the sweet and sour sauce all over the skewers and grill and additional 2 minutes per side. Remove to a serving dish and serve with the reserved sweet and sour sauce, for dipping.

1/2 medium yellow onion
2 tablespoons butter
1 teaspoon sugar
18 ounces ready to eat pulled barbecue pork (such as Lloyd's or Curly's)
8 ounces grated mozzarella cheese
1 (8-ounce) can pineapple tidbit, drained and juice reserved

  • Spray counter lightly with non-stick cooking spray. Combine dinner rolls or Texas rolls into a ball and roll into an 11x17-inch rectangle. Place on a sprayed 11x17-inch baking pan, building up edges slightly. Poke several times with a fork and pre-bake at 350°F for 10-15 minutes. Remove from oven to cool. In a small skillet, bring juice drained from pineapple to a low boil. Boil until reduced to about 2 tablespoons. Melt the butter into the juice. Add the sugar and stir until dissolved. Slice the onion into thin slices. Add to the pineapple mixture and saute, stirring frequently, until the onions just begin to turn golden. Remove from heat and set aside. This is a recipe I came up with to use up leftover BBQ pulled pork. It was such a hit with my boys that I thought I would post it. The recipe as written uses a loaf of Rhodes bread dough as the pizza crust, but I'm sure you could use any crust of your choice, just follow the cooking instructions for that crust. I have tried this pizza on a pizza stone and on a cookie sheet, and the crust comes out crispier on a cookie sheet. Note, the prep time assumes that your bread dough has already been thawed and is ready to use.

1 loaf rhodes bread dough (thawed & risen, or pizza crust of your choice)
1/3 cup barbecue sauce
2 cups mozzarella cheese (shredded)

1/2 cup pineapple (chunked)
