PUMPKIN SAVOURY STYLE MASH
This recipe was developed and tested by Consumer Science students studying Community Nutrition at RMIT University, Victoria, Australia. For a flavour change, you can add ½ teaspoon of honey at step 3, leaving out the tahini paste and curry powder. For a high-energy alternative, add 1 teaspoon of cream and 1 tablespoon of margarine or butter before blending. We made it as posted and thought it was yum. Nutty & sweet.

SAVORY PUMPKIN HUMMUS
I tinkered a bit with what I found in other recipes and this is the result. I think I like my results. I stirred in a small handful of tamari-flavored pumpkin seeds just before serving (couldn't find plain ones) and sprinkled a bit of paprika on top to make it look nice.

Tips:
- Choose the right pumpkin: For the best results, use a sugar pumpkin or another variety with a sweet, dense flesh. Avoid using pie pumpkins, as they are too watery.
- Roast the pumpkin: Roasting the pumpkin before mashing it intensifies its flavor and makes it more creamy.
- Use good-quality stock: The stock you use will greatly affect the flavor of the mash. Use a flavorful stock, such as chicken or vegetable stock.
- Season the mash well: Don't be afraid to season the mash generously. Salt, pepper, and garlic are all essential seasonings. You can also add other herbs and spices to taste.
- Serve the mash hot: Pumpkin mash is best served hot, right out of the pot. You can top it with a dollop of butter, a sprinkle of cheese, or some chopped herbs.
