3 apricots (pitted and sliced)
1 cup strawberry (quartered)
1 cup kiwi (peeled, sliced)
1 cup pineapple (chunks)
1 banana (sliced)
1 cup mango (peeled-chunked)
1/4 cup coconut milk
1 tablespoon orange juice
1 tablespoon honey
3 tablespoons coconut (shredded)

Steps:

  • Combine fresh fruit (except banana) in a medium sized bowl, toss to combine chill 1 hour.
  • Add banana and pour prepared dressing over, toss gently.
  • Serve on lettuce bed.
