4 lbs purple sweet potato (peeled and cut into 1-inch cubes)
1/2 cup whole milk
4 tablespoons unsalted butter, plus more for baking dish
kosher salt & freshly ground black pepper, to taste
3 large egg whites
1/2 cup tbsps sugar
2 tablespoons sugar
1 pinch kosher salt
3/4 teaspoon vanilla extract
1 1/2 teaspoons pumpkin pie spice

Steps:

  • Place sweet potatoes in a large saucepan and cover with cold water by 2 inches. Salt generously. Bring to a boil, then reduce heat to a simmer and cook until sweet potatoes are easily pierced with the tip of a paring knife, 15-20 minutes.
