4 eggs
1 1/2 cups ( 375 mL ) evaporated milk or light cream (5%) or half-and-half (10%)

1 tablespoon butter
½ onion, chopped
1 (12 ounce) package spicy ground pork sausage
4 eggs
½ cup Ranch-style salad dressing
½ cup milk
1 (8 ounce) package Cheddar cheese, shredded
1 dash hot pepper sauce
salt and pepper to taste
1 pinch white sugar
1 (9 inch) unbaked deep dish pie crust

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat butter in a large skillet over medium heat. Saute onion until soft. Add sausage, and cook until evenly brown. Drain, crumble, and set aside.
  • In a medium bowl, whisk together eggs, Ranch dressing and milk. Stir in shredded cheese. Season with hot sauce, salt, pepper and sugar.
  • Spread sausage mixture in the bottom of crust. Cover with egg mixture, and shake lightly to remove air, and to level contents.
  • Bake in preheated oven for 15 to 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 45 to 50 minutes, or until filling is puffed and golden brown. Remove from oven, prick top with a knife, and let cool 10 minutes before serving.

1 refrigerated pie crust ((un-baked))
6 eggs
1/3 cup heavy cream
1/4 tsp salt
1/4 tsp chicken bouillon powder ((optional))
1/4 tsp black pepper
1/4 cup breakfast sausage ((uncooked))
1/4 cup ham ((chopped))
1 1/2 cups cheddar cheese*

Steps:

  • Preheat the oven to 350°F. Unroll 1 pie crust onto a pie dish and crimp the edges. Set aside.
  • Meanwhile, whisk together the eggs, cream, chicken bouillon powder, salt, and pepper. Pour into the prepared crust.
  • Sprinkle the sausage and ham over the eggs. Top with cheese (about 1 1/2" thick) and bake for 30-40 minutes or until the center puffs out like a dome.

6 slices bacon (cut to thin strips)
6 oz fresh spinach
2 tbsps fresh chive (diced)
1 cup half and half
1 cup sharp cheddar (shredded)
6 eggs
1 tsp salt
1 tsp pepper
1/4 tsp nutmeg
1 1/2 cups onion (diced)

Steps:

  • Preheat oven to 350 degrees.
  • Prepare homemade pie dough and roll out to a pie plate. Check the notes for our recipe. You can also use ready-made dough from your favorite grocery store as well.
  • In a skillet brown the bacon slices. Once brown remove the pieces with a slotted spoon. Spoon the bacon onto a plate covered in paper towels. Discard all but 2 tablespoons of the bacon drippings.
  • Add the onion, salt, and 1/2 tsp pepper to the skillet and saute until the onion is light brown and caramelized. Next, add the spinach and cook until half is wilted and remove from heat. The remainder with finish cooking.
  • In a bowl whisk the eggs until the yolks are completely combined. Add the 1/2 and 1/2, remaining pepper, chives and nutmeg then whisk together.
  • Add the onion and spinach on top of the pie dough. Spread 1/2 cup of the cheddar cheese and all the bacon on top.
  • Pour in the egg mixture over the filling. Using a fork lightly lift the filling into the egg mixture. Top with the remainder of the cheese.
  • Place in the oven and bake for 35 minutes or until the center is set. Remove from oven and let cool for 15 minutes. Serve.
