WINNING RHUBARB-STRAWBERRY PIE

Winning Rhubarb-Strawberry Pie image

While being raised on a farm I often ate rhubarb, so it's natural for me to use it in a pie. I prefer to use lard for the flaky pie crust and thin, red rhubarb stalks for the filling. These two little secrets helped this recipe win top honors at the 2013 Iowa State Fair. -Marianne Carlson, Jefferson, Iowa

Tips:

  • Before starting, ensure all ingredients are at room temperature to guarantee a smooth and well-blended batter.
  • Use high-quality cream cheese for a rich, creamy texture. Philadelphia cream cheese is a popular choice.
  • To achieve a graham cracker crust with a uniform consistency, finely crush the crackers in a food processor or blender.
  • For a velvety smooth cheesecake filling, beat the cream cheese and sugar together until light and fluffy. Avoid overbeating, as this can cause the cheesecake to become dense.
  • Gently fold in the whipped cream to the cheesecake batter to maintain its airiness. Overmixing can result in a deflated cheesecake.
  • To prevent cracking, bake the cheesecake in a water bath. This creates a humid environment that promotes even cooking and helps prevent the top from overcooking.
  • After baking, let the cheesecake cool completely before refrigerating it. This allows the cheesecake to set properly and develop its full flavor.
  • When ready to serve, top with fresh berries, whipped cream, or your favorite toppings for an irresistible presentation.

With its creamy texture, delightful graham cracker crust, and endless topping possibilities, this quick and easy cheesecake pie is a versatile dessert that can be enjoyed for various occasions.
