Time 30m

Number Of Ingredients 8

4 small red potatoes
1 small onion
1 Tbsp all purpose flour
1 can(s) evaporated milk, 5 ounce size
1 tsp salt
1/8 tsp onion powder
1/8 tsp garlic powder (you can use more onion and garlic powder, if you like)
1 c sharp cheddar cheese, divided

Steps:

  • 1. Preheat oven to 375 degrees. Spray a small casserole dish with cooking spray and set aside.
  • 2. Fill a large sauce pan about 1/2 full of water and bring to a boil. While water is heating, peel potatoes and onion and slice into about 1/4" slices. Add potatoes and onion to water and return to boil. When water is boiling, cover and reduce heat to medium. Cook 7 to 8 minutes or until potatoes are just tender.
  • 3. Drain off all but about1/4 cup of water. Mix flour and evaporated milk with a fork until smooth. Pour into potatoes. Add salt, onion powder and garlic powder and return to heat. Gently fold being careful not to break up potatoes until sauce begins to thicken. Remove from heat and gently fold in 1/2 of the cheese until melted.
  • 4. Pour potatoes into casserole dish and top with remaining cheese. Bake for about 20 minutes or until bubbly.

Yield This recipe serves 4 to 5 people.

Number Of Ingredients 3

5 or 6 large potatoes
once again depending upon the amount of people you are feeding. A can or two of Campbell's (taste's much better) mushroom soup
salt and pepper and a tbsp of butter or margaring. You may also want to add a can to and can and a half of milk.

Steps:

  • Peel and wash potatoes. Mix mushroom soup, milk, salt and pepper together in a large bowl. Pour onto prepared potatoes and add the tbsp. of butter or margaring in the middle of baking dish. You may want to spray your pan with PAM first. Just slip into the oven at 350 degrees for about 1 hr. Depending upon the oven, you may want to poke the potatoes just to make sure they are soft. If they are, then your potatoes are ready!!

Tips:

  • Use a variety of potatoes. This will give your scalloped potatoes a more complex flavor and texture. Good choices include Yukon Gold, Russet, and Red potatoes.
  • Slice your potatoes thinly. This will help them cook evenly. Aim for slices that are about 1/8-inch thick.
  • Don't overcrowd the pan. If you do, the potatoes will steam instead of brown.
  • Use a flavorful cheese. A good melting cheese, such as Gruyère, cheddar, or Parmesan, will add a lot of flavor to your scalloped potatoes.
  • Don't overcook the potatoes. They should be tender but still slightly firm.
