4 tilapia fillets (about 6-ounces each)
2 cloves garlic
3 tablespoons butter
1 pinch dill weed or parsley, dried
Paprika powder
Salt and pepper, to taste

Steps:

  • Preheat the oven to 350°F (180°C). Mince the garlic into fine pieces. Place the garlic in a saucepan, add butter and dillweed or parsley. Add one dash of salt, one dash of pepper and one dash of paprika powder to the saucepan. The exact amount will depend on your own preferences. Heat the saucepan over low heat until the butter is fully melted and begins to simmer. Remove the saucepan from the heat and brush some of its content over the bottom of a baking dish. 4 tilapia fillets
3 tablespoons fresh ruby red grapefruit juice (I just buy a small grapefruit ... eat one half for breakfast and squeeze the other, a white grapefru)
4 tablespoons unsalted butter
1 teaspoon fresh dill, chopped
1 teaspoon honey (optional)
1/4 teaspoon ground black pepper
1/4 teaspoon kosher salt
4 grapefruits, slices (add them to the oven as you bake the fish, a slice on each fillet adds a nice presentation)

Steps:

  • Butter -- mix the grapefruit juice, butter, dill, salt and pepper.
  • After a recent review, I realized that I use ruby red grapefruits for everything, but it reminded me that not everyone has ruby reds. And for me, I love grapefruit but for those who don't, the option of adding a teaspoon of honey to the juice, butter and dill will give a bit of sweetness to the dish. I did that once for some friends who were a bit more "less" of a grapefruit fan.
  • Fish -- Spray a parchment lined or foil lined pan with pam. Then add your fish fillets and brush well with the grapefruit butter. Cook on the middle rack 400 degrees for 12-15 minutes. I baste with the butter 2 times during the baking process.
  • That's it. Easy simple and big flavor. You can serve a little dollop on top right at the end of cooking if you want along with the baked grapefruit slice.

1/2 teaspoon ground cumin
1 garlic clove, minced
1/4 teaspoon grated grapefruit zest

2 tilapia fillets (6 ounces each)
1/2 cup canned black beans, rinsed and drained
1/3 cup chopped pink grapefruit sections

¼ cup mayonnaise
½ cup sour cream

2 tablespoons chopped fresh dill
